Great recipe. I made four changes in preparation of this dish. First, I used only 2 tablespoons of olive oil to saute the onion and garlic instead of the recommended 1/2 cup of butter. Second, my market only carried 4oz containers of feta cheese so I used that amount instead of the recommended 6oz. Third, my husband is not a big fan of mushrooms so I omitted the them from the recipe. Finally, since I am a "cheesehead" from Wisconsin and have access to lots of types of cheese, I chose to top the quiche with a 4 year aged white cheddar. The quiche was wonderful.
