Chicken Wild Rice Soup

This was a great recipe. I omitted the chicken and used vegetable broth instead of chicken broth. Very hearty. I will definitely make this again.

Spinach Cheese Tortellini

Great recipe! I made this tonight as the main course for a gathering of 12 people so I DOUBLED the recipe. I omitted the mushrooms and instead sauteed 1 onion and 2 garlic cloves in only 2 TBSP of butter. I used halved cherry tomatoes in place of the chopped tomato. Very nice. I also reduced the amount of light cream cheese to 12 oz. Next time I would increase the amount of sauce (by adding milk) since the sauce reduced a bit in the crock pot. I would have preferred a little extra sauce on my plate to dip some nice crusty bread in. I highly recommend this recipe, it was well liked both by kids and adults.

Cinnamon Maple Granola

Excellent recipe! I used quick oats, honey instead of corn syrup, and peacans in place of the coconut. Very nice. I tripled the recipe and found that baking it on two cookie sheets for 30 minutes worked well. I will definitely make this again!

Spinach Quiche

Great recipe. I made four changes in preparation of this dish. First, I used only 2 tablespoons of olive oil to saute the onion and garlic instead of the recommended 1/2 cup of butter. Second, my market only carried 4oz containers of feta cheese so I used that amount instead of the recommended 6oz. Third, my husband is not a big fan of mushrooms so I omitted the them from the recipe. Finally, since I am a "cheesehead" from Wisconsin and have access to lots of types of cheese, I chose to top the quiche with a 4 year aged white cheddar. The quiche was wonderful. Thank you for this recipe.

Tortellini Soup

Great and simple recipe. I did make a couple changes in the preparation of this soup. First, I sauteed 1/2 of a large onion (diced) and 2 garlic cloves (chopped) in olive oil until tender and then added the broth and the remaining ingredients. I did not cook the spinach and tortellini separately. I cooked the soup over medium/low heat for 20 minutes. The tortellini were cooked perfectly. Great recipe!

Banana Cream Supreme

This was an excellent dessert! I made it for an Easter brunch and it was a HUGE hit. Preparation is very easy. I mixed the cream cheese and whipped topping together by hand however next time I may try the Kitchen Aid mixer in an attempt to make the mixture a bit more light and fluffy. Regardless, this was VERY tasty!

Day Before Mashed Potatoes

Great recipe! I made a few adjustments. First, I used Yukon Gold potatoes (about 4 pounds) and left the peel on. Second, because I used more potatoes, I added 8 oz of cream cheese. Finally, I used garlic powder instead of the onion powder. I will definitely make this recipe again. Thanks Erin!

Crab Quiche

This was a great recipe. I made it for an Easter brunch. I followed the recipe exactly with one exception, I used real crab meat. Everyone LOVED it. I had a bit of trouble with the quiche filling being too much for the depth of my pie crust. I even used a deep dish pie crust from the store. I would suggest placing the crust in a deep pie dish to avoid run over and then placing the quiche on a cookie sheet to prevent a messy oven. Otherwise, this recipe is definitely a keeper!

Spinach Salad I

We thoroughly enjoyed this recipe! Although we did not make the entire salad, only the dressing, we found preparation easy and the flavor delightful! We have saved this versatile recipe and use the dressing for everyday use or for special occassions! We hope you enjoy it as much as we did! P.S. In our initial preparation we substituted white for red onion and it worked very well! We tossed the dressing with a spring/spinach mix salad and whole roasted almonds and it was fantastic!

Fava Bean Salad

This quick, easy and healthy salad is packed with fresh flavor. I highly recommend trying this great recipe. I made two minor changes. I reduced the amount of olive oil to one tablespoon and did not add cumin. Wonderful!

Spinach and Pasta Shells

I rated this recipe a 5 for it's ease in preparation and fabulous flavor. I made some mild variations. I used whole wheat penne pasta instead of the shells. I also added 1 (14.5 oz) can of diced tomatoes when I added the cooked pasta and spinach to the skillet. Thanks for the great and simple recipe Yakuta!

Easy Lemon Cake Cookies with Icing

Great recipe...quick and easy. I have an electric oven and had to allow the cookies to bake for 10 minutes instead of the recommended 8. In addition, I was able to make 36 cookies versus the 24 as indictated by the recipe.
