Amaretto Cake

Reviewed: Jan. 11, 2006
I was hoping for something that was quick, easy & a substitute for homemade. With all the additions, it still tasted like it came straight from the box. All Recipes took the "no rating" option out--or I would have used that. If you like the boxed cake taste then you will probably like this one alot.

Louisiana Shrimp Creole II

Reviewed: Sep. 29, 2005
I made this twice in two weeks I liked it so much! But in order to get 5 stars be sure to MARINATE the shrimp in some of the same creole seasoning as your first step so that the shrimp is infused w flavor--not just the sauce. Very easy and really tasty. I added extra chili, hot pepper, used 2 pounds of large shrimp, omitted the garlic and substituted tomato sauce also for the stewed tomatoes. I found it to be great with rice OR angel hair pasta. Thanks.

Wow! So easy and SO good. Lots of flavor and no marinating. Thanks Phoebe!

Green Tea Layer Cake

Reviewed: May 18, 2005
Oh, how I LOVE this cake!!! It's taken me a few months to make this -- I FINALLY decided to splurge & buy the matcha (which, by the way, if you are not near a store that sells matcha, you can go to www.teavana.com). The green color looked great. The frosting is marvelous. I thought the amount of sweetness was just right. I added a little extra matcha & vanilla--very slight amount & the only other change I made was to use all regular flour (that's what I had on hand). The cake is moist & wonderful. I kept it refrigerated in a sealed container. I happen to love green tea...not everyone does. Next time I may increase the frosting ingredients by 1/4. Yummy!! Thanks Suki!

Rhubarb Cobbler

Reviewed: May 4, 2005
This was my first experience with rhubarb and I will definitely use rhubarb again. Thanks for the ever-so-easy recipe! The dish turned out great. I used an 8X8pan, 3 cups rhubarb and one cup strawberries. Everything else went unchanged except I omitted the 1T water to ensure that it wouldn't be 'runny' as some other reviewers complained. I don't see why you need water at all; just keep stirring and the rhubarb makes its own juice. I left it unrated because I am personally not a big fan of cobblers.

Cajun Seafood Pasta

Reviewed: Apr. 13, 2005
This dish was everything I was looking for, but when I make this again, I will marinate the seafood for more flavor. It was very, very good and tasted better the next day. I tried it with basmati rice too & it was scrumptious. Thanks for the ideas.

A-Number-1 Banana Cake

Reviewed: Apr. 7, 2005
I've made this twice already. Excellent! It is great as a banana bread without frosting (I used about 1/3 extra bananas) OR as banana cupcakes with Janni's cream cheese frosting also from this site! I added a dash of baking powder to make the cupcakes and added a bit of cinnamon too. Thank you so much!

Cream Cheese Frosting II

Reviewed: Apr. 7, 2005
This frosting was SO good! I used it on an A#1 banana cake from this website and it was perfect. It is not overly sweet which lets the cream cheese shine. Thank you JANNI!

Butter Cream Frosting II

Reviewed: Mar. 25, 2005
Make sure your ingredients are at room temperature and there are no problems. I mixed by hand and the texture was really GREAT! I thought it tasted like a pretty good homemade frosting.

Triple the Ginger Cookies

Reviewed: Mar. 15, 2005
These are for ginger & gingerbread LOVERS! 5 stars because they came out just like everyone said they would: chewy & delicious. I loved the idea of the three types of ginger but was looking for less of a gingerbread taste. I usually like my cookies less chewy...but my cookies were gone in a day and they stayed nice and soft. I baked one batch 2-3 minutes longer and loved the crispiness. Thank you :o)

Dark Chocolate Cake II

Reviewed: Jan. 31, 2005
The cake was excellent!!! Only changes made: adding some almond extract, and I mistakenly used double the cocoa (I halved the rest of the recipe in order to bake in a loaf pan). Was perfect in 56 minutes anyway. Easy ingredients, easy to make. Next time I will try a cream cheese frosting. (*this was my first time using vinegar in a recipe like this: and it worked)

Marrakesh Vegetable Curry

Reviewed: Nov. 14, 2004
Thanks Leah--Love it! I really wanted to leave out the raisins, orange juice & almonds but I'm so glad that I made the recipe as is!! The heavy OJ flavor faded as it simmered and everything worked well together. Of course I left out the garlic & added extra spices especially curry and also ginger. I will definitely try it with carrot ginger juice next time.

Jamaican Beef Patties

Reviewed: Oct. 13, 2004
Overall these were good. I made mine veggie with Boca meatless ground burger, which I love, but though it was an easy recipe, the flavor wasn't as robust as I expected in the filling or the pastry. I also wanted more of a flaky crust. Thanks for the ideas.

Almond Chocolate Coconut Cookies II

Reviewed: Oct. 12, 2004
These were enJOYEDed (recipe used to be called Almond Joy Cookies)!! Great chocolate chip cookies but to make them superb, you must take the reveiwers' advice: for half the recipe (40+ cookies), I used 3t coconut extract and 1t almond. Next time I will use more. Forget the vanilla! Thanks.

Guacamole

Reviewed: Oct. 6, 2004
The Best!! Only you MUST make sure to use ripe (not hard) HAAS avocados--they have the most flavor! I use 4 avocados, no garlic (sometimes no onion), and 2-4 small jalapeno or serrano peppers instead of the cayenne. Again THE best!

Marbled Pumpkin Cheesecake

Reviewed: Sep. 22, 2004
I have a 10" springform, so I used my 9" glass pie dish--which I think worked out better; the recipe does not make much batter. For the Springform, I would double the recipe and bake longer. Used 2 eggs & took everyone's advice: generous with the pumpkin, used a total of 1C sugar, added more spices including ginger, cloves, cardamom, coriander & black pepper. Baked with a pan of water at 350 for 20min and the rest of the time at 300 & it came out perfect (no cracks)! I will double and make again! DeLISH!

Big Soft Ginger Cookies

5 stars because the fam loved them! These cookies had good flavor, but even though I added 2-3t of additional ginger, there was no BITE (which I was hoping for)! Alas, they were nice and soft and looked just like the photo!

Chocolate Chip Pudding Cookies

Reviewed: Aug. 27, 2004
A good, solid recipe for a cookie whose 'next day texture' is truly impressive. Same recipe as "Award Winning Soft Chocolate Chip Cookies" on this site. I ground the nuts super fine & my friend who 'hates nuts in cookies' loved these. Thanks for the recipe! It's a keeper.
