Mascarpone Stuffed French Toast with Peaches

This recipe was wonderful! The subtle flavors of the lemon in the marscapone and the nutmeg in the peaches really made an exciting, yet warm/comforting breakfast. My husband stated that he much preferred this breakfast to anything else we've had before because it's not overtly syrupy sweet like so many other french toast/pancake recipes. The only changes I made was using canned peaches as this was a last minute recipe and I didn't have fresh. Since the canned peaches were already sweeter than fresh I did not add the granulated sugar, but just left in a little bit of the light syrup it came in and then seasoned according to the recipe. I also used plain bread slices as I've never even seen Mexican Bolillo Rolls in my small northern town. I will definitely be using this recipe again in the future. Thanks so much!

Easy Olive Martini Chicken

Hot 'n' Spicy Buffalo Chicken Salad

Fast and easy supper! Everyone enjoyed this, even the kids...it's not too spicy. Since we're not fans of blue cheese in our house, I substituted ranch and parmesan cheese for the blue cheese dressing and crumbles. Turned out great. I'll definitely use this recipe again.

Quick Eggplant Parmesan

YUM, YUM, YUM! This recipe was delicious! Everyone raved. I couldn't believe how fast and easy it was. The only things I did differently is slice the eggplant about 1/4 inch thick, instead of 3/4 inch and I peeled about half of the peel off of it in verticle strips around the eggplant. I used 1 Tbs. olive oil in a non-stick skillet, it cooked all the way through and nothing burned. Served over whole wheat spaghetti made for a perfect meal. THANKS!!!

Anytime Fruit Salad

This had a really great flavor to it. Just a personal preference of mine would be to whip the cottage cheese in a blender first, just because I find the large curds a little disconcerting in a fruit salad. Also, try not to make more than you can eat in a day or two, because the juice from the fruits will make this fruit salad a runny mess by the end of day two. Went over very well with my guests when first served though. Thanks!

Tofuberry Smoothie

This is a really good base recipe. I changed the fruit to what I had on hand (I substituted peaches and pinapple for the raspberries, added extra banana) and it turned out really tasty. I'll be trying with other fruits too when they come into season. Also, I didn't serve it over ice or ice cream. I just stuck it in the freezer for about a half hour to an hour and stirred. It wasn't too sugary sweet, and had a good drinkable texture. The kids really enjoyed this "dessert". :D

Thai Charred Eggplant with Tofu

This recipe is okay. I think it would be better with a lot of tweaking though. Using the grill for the eggplant is a brilliant idea. Cooked up fast and soft; the grilled flavor was yummy. The tofu was really bland though, could have used some advanced preparation to add some sort of flavor (sauteed in some sort of seasoning like chili powder, soy sauce, or something). Also, everyone agreed that they thought the dish would have been better with some chopped tomatoes added to the sauce. Lastly, after using a blender to mix onions, chili peppers, and garlic in my kitchen, everyones eyes were burning and tearing for about a half an hour. May want to do that in a very well ventilated area...like outside.

Amaretto Sweet and Sour

So refreshing! I used to make Amaretto Sours from a recipe out of a bartenders guide that didn't include the O.J. but this version is much better and I'll be using it from now on. Thanks!

Crab Linguine

This was delicious. Substituted 2 cans of lump crab meat for imitation and added an extra 1/2 cup of italian cheese blend with additional milk to get it the right texture. Also, used a fat-free half and half to save on some of the calories. So good!

Caramel Crunch Apple Pie

Very tasty! I was looking for something like Perkins Restaurant serves and this was it. My apples were pretty juicy, so I had to drain the pie after baking, but before adding the carmel and topping. :) Also, instead of the carmels and evaporated milk, I just poured a jar of carmel ice cream topping over the top since it was easier. I will surely make this again, everyone loved it.

Oven-Roasted Vegetables

Kool Ade Punch

Made this for my son's Kindergarten class and they all loved it. Even the parents kept going back for seconds. The only thing I changed was I used a whole 12 oz. can of Orange Juice concentrate and left out the lemonade since I couldn't find the 6 oz. cans. It was still wonderfully tasty.

Easter Breakfast Casserole

Perfect breakfast casserole. I browned the bacon and crumbled first before adding to the casserole. The directions don't specify, but it turned out well this way. I used Bob Evans Hash Browns that are kept in the refrigerated section of the grocery store, which also made this recipe quicker and easier rather than having soggier thawed hash brown potatoes.

Shrimp Scampi ala Norelllaura

Very enjoyable. Looks like it takes longer than it really does. Nice light and flavorful sauce that can easily be adjusted to suit your likes. This recipe is a keeper and will be replacing my usual scampi dish.

Creole Okra

Definitely my favorite way to have okra. Even my kids enjoyed this recipe, (I was afraid it might be too spicy). I mixed the leftovers in a gumbo soup I made with it and served them together which worked well too. Yum!

Easy Garlic Broiled Chicken

Made this with boneless skinless chicken breast and it was delicious! I was wary about using that much minced garlic, but it turned out perfectly. Quick and easy, juicy and flavorful. Will definitely make again.
