World's Best Key Lime Pie

This is a recipe I come back to over and over again. I do believe the 16 oz frozen whipped topping is a typo and always just use 1 - 8oz container of cool whip. Every time I bring it somewhere, I get such wonderful compliments, and it's so fast and easy! Sometimes I use a lime wedge and mint leaf for garnish, or a regular baked pie crust. No matter what, this recipe works.

Chocolate Coconut Bars

I made this recipe in layers. Using a graham cracker crust, then the coconut/condensed milk, and then put the chips on during the last 10 minutes of baking, smoothing them out when removed from the oven. My husband loves to bring these to work during the holidays as part of a cookie/bar tray for his employees. Thanks!

Company Potatoes

This seemed like it had way too much sour cream. I would cut the sour cream in half and add a little more cheese. Maybe a little garlic salt would give it more flavor too. It did not go over very well with my guests. :(

Anytime Fruit Salad

This had a really great flavor to it. Just a personal preference of mine would be to whip the cottage cheese in a blender first, just because I find the large curds a little disconcerting in a fruit salad. Also, try not to make more than you can eat in a day or two, because the juice from the fruits will make this fruit salad a runny mess by the end of day two. Went over very well with my guests when first served though. Thanks!

Raspberry Truffle Fudge

The chocolate in this was a little overwhelming, maybe just because I'm not a huge fan of dark chocolate. It was so rich I could barely finish a whole peice. If I make this again I will substitue Milk Chocolate chips for at least one part of the recipe. I also made a batch substituting Ameretto for Raspberry Liquor and it came out just as well.

Southern Pecan Pie I

The perfect pecan pie. Easy to make and yummy! I used 1/2 light and 1/2 dark corn syrup and it seemed to be just right. Everyone loved it. I wouldn't change a thing.

Hot Spinach and Artichoke Dip

BBQ Chicken Sandwiches

Much better than simply adding bbq sauce to shredded chicken. However, it seems like there is too much mustard, and the balance of flavors is just a little off. I suppose everyone's tastes are a little different. It's definately a starting point though where I can make it into something I love. Thanks!

Quick Eggplant Parmesan

YUM, YUM, YUM! This recipe was delicious! Everyone raved. I couldn't believe how fast and easy it was. The only things I did differently is slice the eggplant about 1/4 inch thick, instead of 3/4 inch and I peeled about half of the peel off of it in verticle strips around the eggplant. I used 1 Tbs. olive oil in a non-stick skillet, it cooked all the way through and nothing burned. Served over whole wheat spaghetti made for a perfect meal. THANKS!!!

Thai Noodles

Blue Ribbon Sugar Cookies

I usually dread making sugar cookies for Christmas because they're so much work, but these were some of the easiest and tastiest sugar cookies ever. Didn't have lemon extract, so I just put in about a tablespoon of lemon juice concentrate. I also substituted a teaspoon of almond extract for the lemon in one batch which everyone seemed to like. Very good. I'll definitly be keeping this recipe for future use.

Kool Ade Punch

Made this for my son's Kindergarten class and they all loved it. Even the parents kept going back for seconds. The only thing I changed was I used a whole 12 oz. can of Orange Juice concentrate and left out the lemonade since I couldn't find the 6 oz. cans. It was still wonderfully tasty.

Chili Cheese Dip I

This is so simple to make and everyone always asks me for the recipe! The only thing I do differently is I layer the cream cheese (1 pkg), chili (1 or 2 - 14 oz cans), and cheddar cheese (1-2 c.) and bake it in a 9x9 cassarole dish. Sometimes if I want to add a little spice, I'll stir in 1/2 cup of salsa and some chopped jalapenos to the chili. So very good with corn chips or tortilla chips. Perfect for game days. :D

Chili Chicken and Rice

This was so good! My whole family just loved it, including my very picky 6 year old. I substituted shredded taco cheese blend (cheddar and asadaro cheese w/ taco seasoning) for the pepper jack cheese which worked out well. The only thing I'll do differently next time is after cooking the chicken and before readding it back into the pan, I'll cut it up into bite size pieces since it's easier to do before it's covered in the mixture and cheese when served. Fast and easy to make. Very tasty, I highly recommend.

Stuffed Halibut

There is no mistaking that you are pretty much eating warm cream cheese on top of an expensive piece of fish. Yuck. The filling seems like it would be more fitting as a cracker or bagel topping. All of my family ended up scraping the filling off and just eating the fish. Will definitely not be making this one again. Sorry.

Easy Garlic Broiled Chicken

Made this with boneless skinless chicken breast and it was delicious! I was wary about using that much minced garlic, but it turned out perfectly. Quick and easy, juicy and flavorful. Will definitely make again.
