Panang Curry with Chicken

This was very good!! Although, only able to give 4 stars because I had to make several substitutions due to lack of ingredients. My only suggestion would be to(season and lightly coat chicken in corn starch cook until tender, then heat paste in oil before returning chicken to pan and adding milk.} This will not only add more flavor to the chicken but will also help to thicken the sauce. Simply marvelous over rice.

Avocado, Tomato and Mango Salsa

This recipe is ok as written, but great with a few modifications. I eliminated the olive oil serves no purpose. Subbed fresh tomatoes for a can of diced tomatoes w/chiles,used lemon pepper seasoning instead of salt,2 tbs of dried cilantro not fresh,finely diced onions not chopped,added 1 diced avocado and 3 tbs of mexican hot sauce for a kick. The end result w/ homemade chips was awesome.

Kelley's Peach Cobbler

This was a good base for cobbler but modifications were made. I used 1 29oz of canned peaches in heavy syrup. Deleted the water, increased the flour by 1/2c the milk by 1/4c. Divided the butter 1/4 c melted in a pan and the remaining I cut into small cubes and incorporated it into the flour mix before adding the milk. Lastly, cinnamon and nutmeg are a must to add flavor.(added to peaches while simmering). Baked in a 8x8 silicon pan and the end result was great.
