The Best Lemon Bars

Loved, loved, loved these! Made this with only minor adjustments. I like a good level of tartness, so I used the juice of 3 lemons instead of 2 and bumped the flour from 1/4 to 1/3 cup to account for the added liquid. PERFECT...except for the too thick crust. This will definitely be my go-to recipe from now on, but I'll cut the crust ingredients by 1/3 and keep the added lemon juice and flour to get that tartness just right!

Chicken Spaghetti

I'm usually a lot more generous with my ratings, even when I don't really care for the way a dish turned out, but this one was just bad. Way too soupy for the amount of spaghetti and just overall bland and unappealing. I'm so disappointed at the waste with having to toss out almost an entire 13 x 9 pan (nobody wanted to eat it after a few bites), I'm not even going to try to make this again with changes and tweaks.

Bread Pudding II

Overall, I think this is a very good recipe and the flavor and texture were great, but I had to rate it down based on the overwhelming sweetness. It was so sweet, I ate three bites and couldn't continue, and no one I served it to finished their portion either. I will make it again and cut the sugar down to about 1/2 cup and hopefully that will bump this up to a 5 star recipe for me. As is, it's a 3.

Carne Guisada I

Sorry, but I can only give this 3 stars. I followed the recipe with only 1 small change, using a can of diced tomatoes with chipotles instead of stewed tomatoes. Even adding the chipotles, this was way too mild on the heat scale. But my main complaint was the overwhelming tomato flavor. A can of tomatoes, plus 2 chopped tomatoes (and I only used 2 med roma's) overpowered the dish. I will keep looking for my go-to carne guisada recipe.

Oatmeal Peanut Butter Cookies

I've made these twice now and they were a hit both time. I rate this 4 stars as is. Perfectly baked at 11 minutes in my oven. Be sure to let the cookies cool well on the baking sheet before moving them to prevent crumbling. I modified the recipe the second time, adding 1/2 cup more oats and 1 cup semi-sweet chocolate chips...definitely boosted it to 5 stars!

Artichoke Chicken

WOW! This is incredibly easy and incredibly delicious! I had 5 chicken breasts and sliced them into strips before cooking for easier serving and faster cooking. I also increased the topping ingredients some to accomodate the extra chicken. To lighten this up some, I used 1 cup Reduced Fat Parmesan, and a ratio of 1/4 cup mayo to 3/4 cup Light Sour Cream for the mayo (thanks to suggestions from other reviewers!). I had no garlic pepper, so I sprinkled garlic powder and a little fresh cracked pepper on the chicken and in the topping. I also added some minced onion to the topping. I added NO additional salt; this was plenty salty from the artichokes, parmesan, etc. I sprinkled a little 2% shredded 4-cheese blend on the top for the last 15 minutes. Total cooking time was about 40 minutes and the chicken was perfectly cooked and very juicy. Rave reviews from my 3.5 yr old and my parents, and neither my father or my child is a fan of artichokes! I will definitely make this regularly!

Best Spanish Rice

I'm so pleased with this recipe I couldn't wait to post a review! I was looking for something quick and easy and this just seemed too easy to actually be good, but boy was I wrong! I made it tonight and it tasted wonderful and I got rave reviews. I followed the ingredients exactly, but after slightly browning the rice with the onions, I threw that into the rice cooker, along with the broth and salsa (used Taco Bell Chunky Medium Salsa), and let it do it's thing. Came out perfect! I highly recommend both this recipe and the use of a rice cooker to make it. Will most definitely make this a regular recipe in my home.

World's Best Lasagna

YUMMY!!! I made this recipe as is and it was delicious! Maybe a TAD too much salt, so if I could rate 4.5 stars, I would, but the salt issue isn't enough of an issue to rate this down to a 4! The overall flavor was wonderful and I can see so many other uses for this fantastic sauce. I'll cut back a little on the salt next time I make this, which I'm sure will be very soon!

Brownie Biscotti

My 3 year old is insisting that we make cookies for Santa tomorrow night and I've been wanting to give these a try so I made a batch of these today. The dough is VERY sticky, but I followed the advice of another reviewer and used wax paper to shape the logs and it worked beautifully. I adjusted the 1st bake to 350 for 25 minutes, sliced about 3/4 inch thick (1 inch just seemed way too thick), and adjusted 2nd bake to 300 for about 12 minutes each side. I dipped 1 side in melted semi-sweet chocolate. They came out wonderfully crunchy with just the right amount of sweetness. My daughter loved them and so did I. They're great with milk or with coffee. This will definitely because a regular recipe.

Holiday Peppermint Bark

Great recipe, but I'm giving it 4 stars because for 5, you really need to add that layer of semisweet chocolate under the white chocolate. Here's a tip: Crush some of the bark after it's done and sprinkle it on top of a pan of brownies before baking. Makes the most delicious brownies!

Delicious Raspberry Oatmeal Cookie Bars

I've made this twice, once as is and once with Slenda Brown Sugar and SF Raspberry Jam. I'd rate both versions a 4. I found both a little on the dry side, but very tasty.

Broccoli Rice Casserole

Holy Cow, was this incredible! My 2.5 year old daughter LOVED this, but even more of a miracle is that I did, too! I'm not a fan of brocolli, but I'll eat it so that she won't end up a picky eater like me, but I LOVED this! She asked for more twice, and I even had a second helping. Followed the recipe almost exactly, but left out the celery (didn't have any). Will try adding chicken next time, as suggested by another reviewer. I think I'll make this for a potluck next weekend because I know it's going to be a huge hit!

Creole Black-Eyed Peas and Rice

Always looking for ways to get my 2 year old to eat veggies and this one was a hit! We like a lot of flavor, so I added an extra tsp of creole seasoning and doubled the garlic powder, used the canned black-eyed peas that are seasoned with bacon and added two crumbled up slices of bacon left from breakfast. My daughter declared it "DEE-lisus!" so what more could I ask for?? LOL! Will cut the ingredients in half next time, because this made a TON of food.

Down Home Macaroni and Cheese

I've made this before and am rating it Four Stars based on the recipe as is. However, today I made it and didn't realize until I'd started cooking that I only had a little over 1/2 cup of shredded cheddar left. I reserved that for the topping and substituted Colby Jack for the cheddar in the sauce. I also added about 1/2 tsp fresh cracked black pepper to the cheese sauce. OMG! It is fantastic. With these modifications, I would rate this FIVE STARS! Try it!
