Apple Oatmeal Bar Cookies

Just made this for the first time. I substituted wheat flour, doubled up the applesauce, used 1/2 cup of walnuts and 1/2 cup of slivered almonds, added 1 egg, and 1/4 cup of mini chocolate chips. I was looking for a "granola bar" recipe when I came across this one. This recipe is fantastic. It is great and so easy to make simple additions and changes to according to an individuals taste buds. Thanks for the recipe. Next time I'm leaving out the chocolate and adding protein powder.

Paleo Omelet Muffins

These were a hit, even for the pickiest eater in my house, my 50-year-old "child" (lol). I was looking for a healthy grab-and-go breakfast that I could eat on my hour commute to work. These did the trick. I change out the ingredients to keep them from seeming like the same old thing. I've tried diced ham, bacon, different cheeses, onion, peppers, tomatoes, olives, chicken, spinach, and the list goes on... On the weekends, I bake them, slide them into single serve freezer bags, and HIDE them in the back of the freezer or they are gone before the week starts. Thanks for a great recipe.

Portabello Mushroom and Pepper Risotto

This is a great risotto for someone like myself that has never made it. I tried it with jasmine rice since this is what I had on hand. Now that I have a basic knowledge I will branch out and try the arborio and faro style risotto. Thanks for making this experience painless. Great flavors. The only thing I did different was use red and orange bell pepper in place of the green bell pepper.

Oatmeal Blueberry Muffins

I NEVER do reviews but had to on this one!!! I recently lost 80 lbs., started a new job, and was looking for ways to pack a healthy breakfast and lunch due to my hours. I took the advice with some of the edits: sub 1/2 wheat flour, omit oil for 1/2 cup of applesauce, doubled up blueberries, traded out sugar for 1/3 cup of brown sugar and these were FANTASTIC. Thank you for making my hour commute bearable dare I I say tolerable.... :)

Spinach and Tortellini Salad

My neighbor had surgery, I was looking for something her husband wouldn't have to go through a lot of trouble to make for her, and I came across this. I omitted the black olives, used 19 oz. of tortellini, fresh grated parmesan, fresh baby spinach, fresh basil from my garden, and only 4 oz. of Italian dressing. I have to say your recipe was a hit. The wife wanted to know every detail on how to make it. Thanks for a great idea!!! I'm going to start using this on a regular basis. I've even been kicking around the idea of adding some marinated balsamic chicken next time.
