Arugula and Watermelon Salad

I made this almost as-directed (used less balsamic and only 1/4 a red onion) and it was a HUGE hit at the summer potluck! I used pre-cut watermelon from the grocery and this was SO easy and quick to throw together into a bowl and run out the door!

Original Blue Cheese Coleslaw

This was amazing! I followed the recipe almost exactly (I used a bit less lemon and a bit more blue cheese) I also used packaged coleslaw, but with lots of extra julienned carrots and extra red cabbage. This one is going in my favorites!

Broiled Scallops

wow! I didn't know such a simple recipe could be SO good! I used bay scallops and took the advice of another reviewer so I wouldn't have to use the broiler. I melted butter and garlic salt in a pan and sauteed the scallops (added a little old bay too) and then squeezed on some lemon at the end of cooking. YUM! I served these over a bed of steamed green beans. Thanks!!

Caramelized Brussels Sprouts with Pistachios

This was the first time I've made brussels sprouts and I really liked them thanks to the flavors in this recipe. I didn't have pistachios on hand, and it was great without -- though I'm looking forward to adding them in next time. Thanks!

Emily's Manicotti

I added 4C fresh mozzarella cheese, 2C ricotta cheese, and 1 egg to this mixture before baking - I had much more filling than I needed, so I froze the extra for next time. It was the perfect solution to getting both meaty and cheesy manicotti! I use the end of my spoon to really pack in the filling so the noodles don't collapse. Great recipe!!

Sweet-and-Sour Skewered Shrimp

I love this recipe! I add red pepper, yellow pepper, red onion, zucchini, summer squash, and pineapple chunks to the skewers and to make the sauce easy, I just mix 1 cup of sweet and sour sauce from a jar with the pineapple juice reserves from the can - I use the sauce to baste shimpe and veggies before, during, and after cooking. It's easy, healthy and delicious!!

Grandma's Sloppy Joes

I love this basic recipe! To make it easier, I sometimes just used the canned sloppy joe mix (manwich or the generic brand) and add everything in this recipe except the vinegar and ketchup. I don't add cloves either - I like to save the expense. I add a dash of worchestershire sauce too. Excellent! Thank you for the recipe!

World's Best Lasagna

This was incredible! I didn't make many tweaks at all and have to say that using fresh ingredients - basil, parsley, mozzarella, and parmesan cheese specifically - really made a big impact! I noticed that the ricotta wouldn't be quite enough so I mixed in about 8oz. of cottage cheese and that worked well. I only used 9 lasagna noodles like other reviewers. THANKS!!

Chicken Parmigiana

This was excellent! I combined several users' suggestions: added oregano, basil, garlic powder, and butter to the breadcrumb mixture. I baked the chicken on a cookie cooling rack, and I didn't add any sauce until it was ready to be served. I used a plain jar of pasta sauce and added oregano, basil, brown sugar, and parmesan cheese to it and just simmered it on the stove. Thanks for the recipe and thanks for all the great tweaks and suggestions! This recipe is going into regular rotation!

Shrimp and Feta Cheese Pasta

This was great! It made the whole house smell delicous! Like other reviewers, I added extra wine in place of the olive oil (only used about 1 tbsp oo total.) I don't like tomatoes, so I threw in some portobello mushrooms with the shrimp. Thanks for the recipe! :)

Sirloin Tips and Mushrooms

I combined a few different suggestions from reviewers and this turned out FABULOUSLY!!! I must say that I have only 3 other dishes in my "favorites" folder, so it takes a lot to get there. I'm glad to say I added my 4th after making this! I used fresh mushrooms instead of canned and added about 1/4 C of water. I added 1 beef bouillon cube and plenty of bay leaf and thyme. I used cooking sherry as my wine and also added 2 tbsp of brown sugar. I browned the beef with the oil and garlic slightly before adding the other ingredients, set the temperature to medium, covered the skillet, and cooked for about 40 minutes. The sauce cooked down and was thick and delicious. I stirred in about 2 tbsp of butter after removing from heat. I served this over mashed potatoes. THANK YOU for such a great recipe!

Slow Cooker Turkey Breast

Be sure to check your cook times - mine was a little overcooked and therefore, a little dry, but still delicious! I gave 5 stars because I know that next time with a temp. adjustment, this will be absolutely perfect! Even overcooked, it was excellent. Thank you for sharing!
