Turkey Picadillo II

Yum! This was a lot more flavorful than I anticipated. The salty olive and sweet raisin combo is delicious. I even mistakenly added a can of kidney beans instead of black beans, didn't add olive brine, and forgot the capers. It still tasted great (even better when I remembered to add the capers!) I will make this again, next time following the directions.

Tomato-Mint Quinoa Salad

This is a huge hit, even with college boys. I wasn't sure about the radishes and mint, but this combo alongside the lime juice and cumin makes this a refreshing and delicious side dish for any summertime menu! In my latest versions, I tend to omit the cucumbers (since I don't like them) and find that a touch of olive oil works just fine.

Exquisite Pizza Sauce

This sauce didn't taste like much by itself, but slathered on the crust with salami, roasted red peppers and cheese, it truly was exquisite. My husband said it was the best pizza he has ever had!

Big Al's K.C. Bar-B-Q Sauce

It was so good I didn't even care if my husband liked it! (he loved it, thankfully.) I made a half batch, cooking it in the crock pot with some beef shoulder. It made incredible pulled beef BBQ sandwhiches! I also made a few changes based on what I had on hand. I used honey instead of molasses and because we love honey! I also had half a jar of pasta sauce I used instead to tomato sauce and it was tasty with extra Italian seasonings. I think I will stick with this exact mix again next time.

Broccoli with Garlic Butter and Cashews

This was the first time my guests raved about the broccoli. A perfect side dish for hosting and easy to make. I cut back on the butter and will cut back even more next time. I don't think we will miss much more than the fat.

Cod with Italian Crumb Topping

I made this recipe with a few changes in order stay within Michael Thurmond's rules: New orlean's seasoned fish fry breading mix subbing for bread crumbs and cornmeal (so tasty!),and i brushed white wine over the cod before spooning the crumb mixture instead of egg. This is a very delicious recipe and i may use it again tomorrow night!
