To Die For Blueberry Muffins

These were extremely tasty muffins. The one problem I had was that they overflowed badly instead of rising, and the crumb topping dipped down into the centers of the muffins. This is probably because I used cake flour (that was all I had on hand) so that's my fault. And that's also my tip: don't use cake flour. Although the cinnamon crunch stuff being down the center was kind of an interesting variation- and still delicious. Will definitely be making this recipe again (with AP flour!)

Broccoli Cheese Soup VII

This recipe was not to my liking. The only thing I did differently was use fresh, steamed broccoli instead of frozen. Oh, and I made my roux the correct way because it'd have gone lumpy if done the way directed in the recipe. Way too much cheese in this, it was too thick and had a weird mouth-coating feel. We tried it and wound up adding a LOT more milk to it to make it even edible, and it was still just too heavy and thick and extremely salty.

Amazing Whole Wheat Pizza Crust

This was pretty good. I really liked the texture. I added some flax seeds to it, which I think was nice. Next time, I will add maybe a bit more sugar and a bit more salt.

Double Tomato Bruschetta

WOW!! This was terrific. I used some of the oil from the sundried tomato jar in place of the olive oil, and I used about 5 or 6 cloves of roasted garlic. I put everything (except the cheese and the bread) into the food processer and pulsed a few times until it was about the consistency of spaghetti sauce. I refrigerated it overnight and served as a cold dip with fried zucchini and packaged panetini toasts as an appetizer for some guests. They raved over it! I will be making this again, ASAP- and in a much larger quantity! It'd be awesome as a pizza sauce.

Fudgy Brownies II

The flavor was awesome, but the texture was not what I wanted. I thought they'd be chewier... but they definitely are fudgy like the title implies- they almost melt in your mouth, they're so much like fudge!

Fudgy Brownies I

These were ok. Like another reviewer said, they're not sweet as you eat them but have a very sweet aftertaste. I prefer brownies to be very rich and these really weren't. They were missing a flavor that I can't put my finger on. It's not that they were terrible, they just were not as good as some boxed ones. I probably won't make them again.

Dee's Health Bread

This is awesome bread. I do cut the recipe in half and make two large loaves (instead of 3 small). With a few changes, this is our standard bread that I make once a week and we use it for everything from toast to sandwiches. I use agave juice in place of the sugar and I use a 9-grain mix from my grocery store's bulk bins in place of the cracked wheat. I replace half the water with milk. It is really delicious- nice and soft, good texture, and the taste is to die for!

Buttercream Frosting

OK not sure if I should be even rating this b/c I changed it up a bit, but it was SOOOO good that I had to share. Ha! I halved the recipe and that covered a 9 inch 2-layer cake. Also, I added Bailey's for the liquid... OMG so good. And I'm not normally a frosting person- but WOW. This seems to be a very nice basic recipe though, came out very fluffy and smooth!

Cake Mixes from Scratch and Variations

I chose this recipe b/c it looked easy and had decent reviews. I am not sure why it had such good reviews! I followed the chocolate cake variation to the T, and it was just not good. 2 stars because it was edible- but it was so dry and crumbly and flavorless. Most certainly will NOT make this again.

Green Tomato Cake

This is very good. I used canned pumpkin in place of the butter, and I didn't drain out the juices of my tomatoes. It smells odd baking, and looks just horrifying, but it tastes great and is very rich, dense, and moist. Yum!

Mediterranean Vegetable Stew

Really really good. I added some zucchini because it was sitting around looking at me. Also, I doubled the herbs because herbs are good. Even my husband who claims to hate eggplant, mushrooms, and zucchini ate two huge bowls.

Downeast Maine Pumpkin Bread

This is wonderful! The only thing I did different was use only 2 cups of sugar instead of 3. It came out perfect. UPDATE: I made this again, using my own homemade pumpkin butter and it was even better than before. WOW!!!! YUM!

Alfredo Sauce

This recipe was pretty good. I added some crushed garlic to the butter, I doubled the cheese, and I added a little bit of white pepper. It was really thin despite the extra cheese, but it had great flavor and was very smooth and creamy. I just wish it'd been a little thicker.

Smoked Salmon & Watercress Salad With Red Onion-Caper Vinaigrette

This was really good. I left out the capers, as my husband and I don't like them, and added a tablespoon of honey- and mixed the dressing in my food processor. It was nice and simple but packed with flavor. A great, cool summer meal. Will make again as soon as my hubby smokes some more salmon!
