Cream of Pumpkin Soup

I read as many of the reviews as I could and I did add brown sugar and doubled the spices and added nutmeg. I also used half n half instead of the heavy whipping cream. This recipe was just OK...I was hoping it would be GREAT. It does need something...just don't know what it is! But I would make it again and just try to play with the ingredients a little. If you're interested, I would still say you try this recipe. It's good and is unique for a chilly fall evening!

Jamie's Cranberry Spinach Salad

Because this recipe had so many reviews...I just had to try it! I read as many of the 5-star reviews and suggestions as I could, and then quite a few of the ones where people said they didn't like it. It seemed to me that the main reason people didn't like it was because the dressing was too overpowering. I took a lot of the suggestions of other reviewers and altered the recipe only slightly, and it was -- as so many others have already said -- fantastic! I used a 1/4 c Spenda, dry roasted the almonds, used mixed greens in addition to spinach, did not use poppy seeds, used Craisins and a small can of Mandarin oranges, only used 1/4 c olive oil and sprinkled reduced-fat feta on top afterward. (I also added cucumbers cut into quarters because my boyfriend loves them.) I did not add the dressing directly to the salad but drizzled it on prior to eating just in case it was too much. It was extremely tasty and my boyfriend raved about it and said this should be something we make all of the time. This one is a keeper!

Cucumbers in Sour Cream

I did not soak the cucumbers but just cut them and put them right in the sour cream mixture. Still tastes great!

Crispy Edamame

This is an easy-to-make, unique side dish for people who aren't all that familiar with edamame. My family really liked it, even the ones that were hesitant because they thought it was going to "taste like lima beans." I did not cook it until it was crispy. Just cooked it enough until it was warm all the way through and the cheese baked in a little. I'll make this again!

Chicken Florentine Casserole

I followed the other reviewers' suggestions and did not bake the chicken first (skip step 1). This allows the chicken to cook in the sauce mixture and it comes out very tender (I did increase the cooking time in the oven though). I also did not put the cheese and bacon bits on the top and everyone in my family raved at how good it was! I think it would still be great with the cheese/bacon bits, but our preference was without. It's a great recipe though. Thanks for sharing!

Jenn's Out Of This World Spaghetti and Meatballs

I loved this recipe! The meatballs were great and it was nice to just throw them in the sauce and let them cook as the sauce simmered. Thanks Jenn!

Clam Fritters

Don't expect these fritters to be like the round fritters you get at a restaurant, they are truly more like pancakes. But they were good, a tad bland, so we ate them with ranch dressing (all I had). I also made a batch with corn instead of clams...a different taste but not bad! Next time I'd like to spice up the clam version a little and possibly make some type of sweeter sauce to dip them in. But overall, very good!

Shrimp and Crab Stuffed Flounder

This was a great recipe! The store I was at didn't have Flounder so we used Tilapia and it was great. Also used imitation crab meat, but I think it would have been tasier with canned crab meat (although more expensive).

Smothered Mexican Lasagna

Truly enjoyed this alternate version of lasagna! Cut the water down to 1.5 cups or even 1 cup...2 cups is too much. I also melted some shredded cheddar cheese on top when I baked it. Very good!
