Apricot Brown Sugar Ham

Banana Oat Muffins

Very good, but not sweet enough for me. I used light sour cream and some water instead of the milk to get a moister muffin. Recipe could also use some cinnamon.

Wow! This is delicious for being such a simple dish. Next time I'm going to try shrimp and/or scallops instead of beef. I will also make 1-1/2x the sauce.

Grilled Salmon I

I had a 2-1/2 lb Norwegian farmed fillet which I cut in half and placed on the oiled gas grill. I tented the fish with foil after about 10 mins b/c the bottom (skin side) was cooking faster than the top. The coals ended up catching fire and singing the skin, so I placed the salmon under the broiler for a couple minutes to finish it. It came out very moist with a hint of the marinade (next time I will marinate it for 3 or 4 hours instead of 2.) This is the best salmon I have ever cooked or eaten.

Grilled Portobello Mushrooms

OMG! I went totally rogue w/ this recipe - sorry. I used olive oil instead of canola and white balsamic vinegar and ended up marinating these for 3 days b/c I got sidetracked. I sauteed them over med-high heat and they are the best mushrooms I have ever tasted. I'll be using them in a frittata with feta and caramelized onions tonight.

Pizza Casserole

This was much better than I expected. I baked it in a deep casserole dish, which helped it stay moist. I added another layer of cheese in the middle of it, and topped it with sliced black olives. I will definitely make this again.

Incredibly Cheesy Turkey Meatloaf

This is the best turkey meatloaf recipe I have ever tried. I chopped up onion, garlic and carrots in the mini-food processor so making this was a cinch. Even my 2 year old ate it!
