About this Cook
I love to cook, but who'd've thought this a few years back??? I have a large family that loves to eat. My specialty is taste not looks. So, there! Living at home with Hubby, and our kitty cat. Influences are Caribbean, Spanish, French, and Italian.
My favorite things to cook
Anything tasty, healthy, fattening, delicious, new.
My favorite family cooking traditions
Cooking with wine and sometimes putting some in the food. LOL!
My cooking triumphs
Thanksgiving '05. Did it all by myself with Hubby helping out. My first time EVER! Dad and Mom and Hubby had seconds and thirds!!! The trend continues. Thanksgiving 08 was perfect!
My cooking tragedies
OY. Thankfully that hasn't happened with company over. My stews have looked like (well regurgitation) in the past... UHM... NEVER ADD THE SWEET POTATOES EARLY!

Colleen's Slow Cooker Jambalaya
I changed a few things. 1. I used Italian turkey sausage and browned the slices before adding them to the pot. 2. I bought raw shrimp because I don't trust "cooked" shrimp at the market. I boiled water, with salt, jerk, and bay leaf and cooked the shrimp in the boiled water for 5 minutes. 3. I browned the chicken cubes because I couldn't stand the thought of putting raw chicken in my pot - call me weirdo. I did like one of the readers said - strained the diced tomatoes - used some of the juice but not the whole thing. I added more cayenne and jerk. DEEELISH!!!

Weekday Pot Roast and Vegetables
EASY BREEZY!!! DELISSSSHHHH!!! I added spinach and bok choi to mine - because we love greens. Made the mistake of getting one can of gravy and one can of cream of chicken!!! But it was yummyyyyy!!! I am going to enjoy it for a couple of days and make some more next week!!! Thank you!!!

Oatmeal Peanut Butter Cookies
Wowy Wow WOW! These are GREAT! They taste great and are highly fragrant. If, like me, you LOVE LOVE LOVE the smell of peanut butter, you'll love making these. Here is my hint: -Keep a VERY close eye on these. They brown VERY easily and you don't want to OVERBAKE them. As soon as they start getting a little color and if the bottoms are already golden, plan on taking them out of the oven. YUMMAYYYY!!!
