Out of this World Turkey Brine

I have used this recipe 3 years in a row. I just made it again today. This plus Alton Brown's turkey recipe = the best! My 72 year old father-in-law said it was the best turkey he's EVER eaten! I lovingly get teased from my mother-in-law about it every year! I use a cleaned out ice chest and cover the top layer in 3" of ice cubes and store it outside (I live in the NW and the outdoors keeps it cold).

Teriyaki Salmon

Finicky kids LOVED this! I did 1/2 sesame oil, 1/2 olive oil. I added a touch of rice vinegar and a spoon of freshly minced garlic. Marinated only about 10 minutes as the oven warmed to 425. Cooked for about 20-25 minutes. Scooped some liquid from pan onto the salmon after it was done cooking and let sit 5 minutes. YUM!! Will make again with a little less oil.

Butternut and Acorn Squash Soup

My family would prefer if I left out the cinnamon. Otherwise, it was so yummy. I am not normally a fan of soup but it was yummy. Give yourself more prep time since you need to cook the squash first to soften it. I will make again, minus the cinnamon.

Roasted Winter Squash Seeds

YUM YUM!! Who would have known these were so tasty! They are like miniature pumpkin seeds. I am just sad that I don't have more. My kids are just about to walk in the door on this crisp autumn day from school and they will devour them! If only more people knew!

Whole Wheat Zucchini Bread

This was my first ever attempt at zucchini bread. It turned out amazing. I did swap out the brown sugar for raw sugar. I did not give it 5 stars since I had to add some milk to the recipe since there was not enough moisture. Also, I used 4 cups whole wheat and 2 cups white flour. Next time I'll buy the pastry flour. I shredded the zucchini rather chunky for some texture since I do not like to add walnuts to my breads. My 10 year-old, who despises zucchini, asked for 3rd and 4th helpings!

Rosie's Bok Choy Salad

Taco Pie

There was so much hype that I was expecting a DELICIOUS meal! Instead, it was sort of bland and just OK. I added refried beans, black beand and green chiles, too. I'd just rather make tacos. Seemed like so much work for so little flavor.

Grilled Lemon Chicken

SO tangy and zesty. My kids loved it!Marinated for an hour. Then I baked it in the oven, with juice, and it made it very moist. Also, I topped with crumbled feta cheese during the last 10 minutes. Steamed broccoli to eat with it. DELICIOUS!

Marinade for Chicken

WOW!! This is the first marindae when my husband DID NOT add additional spices to his chicken. My kids all asked for seconds. I did add some crushed garlic, dried dill, a small amount of Turmeric and Cumin. It is SO delicious! I only allowed the chicken to marinate for 4 hours due to time contraints. Will use over and over again!

Donna's Cheesy Quiche

The taste was incredible! My husband enjoyed it more than any other quiche I've ever made. My only problem with it is that the cheese made a thick skin that was hard to cut and hard to get a decent amount on the fork without making a mess. Next time I'll add mushrooms.

Cheesecake Supreme

I did not change a THING in the directions. Even cooked for 2hrs 10 min and no cracks, no brown spots.. nothing! I don't know why so many other people had so many problems! Hubby put a piece in the freezer so he could eat it within an hour and not have to wait the 24 hours in the fridge! So rich and better than The Cheesecake Factory!
