Mexican Rice

Delicious! I only use red peppers, because that's what I usually have on hand. Green peppers would add a nice touch of color though. Thanks!

Apple Bundt Cake

My DH loved it! The only difference I made was to use brown sugar to coat the apples and half white half brown sugar in the batter. I also poured half the batter before adding the apples, and then the other half (instead of thirds). Thanks!

Cinnamon Swirl Bundt Coffee Cake

Delicious! I used half brown half white sugar in the cake, and all brown in the swirl, and upped the cinnamon to 1.5 T and sugar to 1/3 cup. My DH loved it! Thanks!

Cranberry Pistachio Biscotti

They rock, what more can I say =) I used half normal olive oil half canola, because I dont buy light olive oil. Also, 1 cup nuts 1 cup cranberries. I kept them a bit longer in the oven to dry out, just with the heat off and the door slightly open. Delicious! I might try the version with orange extract too.

Pizza Without the Red Sauce

I often use the sauce, but replace the pesto but pasta sauce. I don't like too much tomato sauce on my pizzas, and the amount in this recipe is just perfect! I have tried all the recipe once, substituting pepperoncini for the jalapeno, and it was delicious. Thank you!

Butternut Squash Bisque

It was good, but I thought that the flavor of the carrots was a bit overpowering. I will use less next time, and maybe add a few spices. I tasted before and after adding the cream, and it's definitly much better with.

Sky High Yorkshire Pudding

Very good! They rose very high and didn't deflate. I would check them after 25 mn though. After 30 min, they were slightly too brown. Thank you!

Spinach Quiche

This recipe IS forgiving! I thought I had all the ingred. but didn't. In the end, I used 3 eggs, 4 oz of feta, 4 oz of mont. jack, a 6 oz bag of spinach, no mushrooms, and about 1/2 cup of milk. I precooked the crust for 5 minutes. It was very good, but the leftovers were not. Will make it again! Thank you.

Oh God, these are so incredibly delicious! I divided the recipe by 2, and made 12 cookies out of the batter. I baked them 11 minutes. They were amazing. Thank you for this wonderful recipe! (I only used butter, and kosher salt)

Zucchini Brownies

Delicious, but it's more a cake than a brownie. My husband thought that it was too much choc. with the frosting, and that a cream cheese frosting would have been better. I froze half and we'll see if it's good after it's thawed. Thanks! UPDATE: I made it again and we could see the zucchini! I would suggest soaking the shredded zucchini in the oil first to get it really moist, and then continue with the recipe. It's the only thing different I did the first time...

Thai Charred Eggplant with Tofu

I made some changes (used 1 eggplant, no cilantro and less basil, fried the eggplant slices, sprinkled some soy sauce on the tofu, and used red peppers instead of chile). It was excellent and very flavourful. I served the dish with white basmati rice cooked in vegetable stock. Will definitly make it again!

Coconut Cream Pie

It was very good, but it did not really have a coconut taste... I made 1 change: instead of using 3 cups of milk, I only used 2 cups + 1 cup coconut milk. If you don't expect a strong coconut taste, it is a very good pie. Be sure to use a non stick pan. I used stainless steel and the sugar burnt at the bottom, giving the pie a slight burned taste. That wasn't the recipe's fault though. Thanks for sharing!
