Classic Caramel Corn

Delicious corn. I used to make Amish Caramel Corn from this site, until I ran out of light corn syrup. This recipe used dark corn syrup so I tried it out, and it was great. I popped a generous 1/3 cup corn, and it was great. The liquid foams a bit in the oven, which really helps with coating the popcorn. Also, dark corn syrup doesn't have the high fructose syrup light corn syrup has.

Apple Strudel Muffins

Delicious. I only used cubed apples, and added 1 tsp cinnamon and a pinch of nutmeg. Also, I used half white half brown sugar. Everyone loved them!

Fresh Rhubarb Pie

My husband loved it, I didn't use butter in the pie, and only used 1 cup of sugar. I used grandma's secret pie crust from allrecipes. I did make 4 little hole on the top crust before baking, because I was afraid it would be soggy if I didn't. Thanks!

Sweet Pepper Pasta Toss with Kale

I used Dino kale, ribs removed, and doubled the amount. I used Barilla Plus penne, and only used 1 red pepper. I also added 4 chopped green onions, green and white parts. I used a little less feta, I love feta but there was a LOT of it there. I always saute peppers first, and then add the rest so the garlic doesn't burn. It was very good. Also, I boiled the pasta in water in which I added paprika, garlic powder and cayenne. I didn't put the cayenne in the dish itself and it was spicy enough for me. Delicious!

Asparagus Swiss Quiche

I did not use bacon, instead I sauteed the onion in olive oil, and then when it was already fairly soft I added the asparagus. I add a few teaspoons of water to the pan, partly covered it, and cooked for 3 minutes or so. I then added this to the egg mixture (I didn't have half and half so I used evaporated milk) and use Monterey Jack because I did not have swiss. I used Grandma's secret pie crust on this site. It was delicious. Thanks!

Brick-Oven Pizza (Brooklyn Style)

Very good. I didn't do the 16 hour rise. I just mixed and kneaded the dough, and let it rise for 3 hours (it was about 71 degrees in the house, and the cold water slowed the rising). My oven only goes to 500 degrees, so I baked it a little longer. I also added veggies on the pizza, and fresh tomatoes instead of canned. Will make again! Thanks :)

Good 100% Whole Wheat Bread

My husband loved it, and he eats about a loaf of this bread every week. I did add 1/4 cup gluten, and added the dry ingredients to the foamed yeast in my kitchen aid. I let the machine knead the dough for at least 5 minutes so it is light yet dense enough to use in sandwiches. The loaves do not rise very high though, but it's still very good. Thank you!

Melt - In - Your - Mouth Shortbread

Very good, and they do melt in your mouth. I baked them at 350 for 12 minutes, with on each 2 semi sweet chocolate chips and 2 white. I never had a shortbread cookie before, and shaped them into slightly flattened balls. My husband said they should be flatter, so the cooking time should probably be decreased down to 10 min or so in this case... Thanks!

Cinnamon Raisin Swirl Bread

It was pretty good, I increased the filling ingredients by half and thought it was enough. The bread itself did lack something though, I might try some of the other cinnamon raisin bread recipes on this site and see what might be missing. I did like the fact that it had no eggs though! Thanks!

Perfect Pumpkin Pie

It was a very good pie, however we thought it could use more spices (about twice as much). I doubled the recipe to bake it in a deep 9 inch dish, but found that the normal recipe would have been enough. Next time, I will just increase the spices and keep the other ingredients as they are. Thank you!

Cranberry Upside-Down Coffee Cake

I cannot believe I did rate this recipe. Everyone loved it. My aunt made it with walnuts and she said it was delicious. I didn't change anything in the recipe, and it was great. My husband did ask for a little more cranberries next time though. I always wrap the springform pan in alum. paper and set it on a pan. I also found that putting a square of parchment paper at the bottom of the pan (bigger so that the edges are outside the pan in between the bottom and the round) prevent any leakage.

Iced Pumpkin Cookies

I asked my husband how many stars I should give, and he said "as many as there are!". I used half brown half white sugar instead of all white. I made 12 cookies out of the whole batter, and they took 18 minutes to cook perfectly. Thank you!

Olive and Feta Pasta

My husband and I thought it was absolutely delicious. I sauteed the zucchini with the mushrooms in olive oil, and added the garlic only when the veggies were almost ready so as to keep the flavor and not burn it. We also added a lot more feta, cut into small cubes (about 1-2 oz for half the recipe). Next time, we might add a diced fresh tomato. Thanks!

My Amish Friend's Caramel Corn

Wonderful! I did half the recipe using a 3.5 oz bag of plain microwave popped corn and it was wonderful. It sounds tricky, but it's very easy.

They were very good, but a little bit too sweet (and I used brown sugar). They are very easy to make if you use a food processor! I didn't change anything in the ingredients.
