To Die For Blueberry Muffins

I have been making this recipe for years, and it's fabulous but it had room for improvement in two places. First the depth of flavor seemed just a bit lacking, the other was keeping the crumb topping from falling off when pulling out of the pan. I solved both by accident. First, use 1/4 cup brown sugar and 1/2 cup white for the flavor (and it won't effect the color). And I used brown sugar again in the crumb topping, but accidentally overmixed it till it was almost like cookie dough. I broke it apart and "crumbled" it on the muffins- they turned out awesome and all the topping stays!

Coconut Cranberry Bars

Better than I thought they would be- considering the condensed milk mixed with the others didn't look so appetizing. It was incredibly easy - although you have to be careful putting the sticky top stuff on the graham cracker crust (try to evenly disperse from bowl instead of spreading from the center). I almost thought I over cooked them but they turned out perfect!

The Best Chocolate Cake You Ever Ate

Phenomenal... that's all one can really say. Even my sister who "really dislikes chocolate cake" ate it up and raved about it. I made it for my Dad for his birthday (a make up cake really) and it was perfect! I don't really even like cake and I couldn't not eat this one! I garnished the outside with mini chocolate chips which added a great texture to the finished cake.

Ron's Bread Machine White

Pretty good and standard recipe... it actually cooked evenly in my bread machine (something that has not happened with any other recipe). I added warm water for the yeast, but kept the milk cold so the egg didn't cook before the flour was added. Good sandwich bread! I used small loaf setting w/ light crust.

Zucchini Brownies

I agree with the vegetable aftertaste, but pretty good (great when you're sick of zucchini bread!). My husband really enjoyed them and he claims he doesn't have a sweet tooth. The frosting definitely left something to be desired- it got all runny and puddled in a few places. I let the frosted brownies sit out uncovered and they were less cakey and the frosting kind of soaked in a little, making them tasty. Not real brownies, but not a poor substitute!

Best Breakfast Cookie

Pretty darn good way to start the day! I am not fond of dried apricots baked into things, so the fruity version of these was not MY absolute favorite, but the family devoured them. I made half the batch with mini chocolate chips, omitting the dried fruit, and those were awesome. Great traveling breakfast! (and not a bad hiking snack either!)

Oatmeal Peanut Butter Cookies III

Hot Fudge Sauce

I made this twice, the first as the recipe said with a few chocolate chips thrown in- dipped strawberries in it- delicious! The second time I didn't have baking chocolate and just used chocolate chips, was good but not as good. The first one was decedent... mmmm.

Red Skinned Potato Salad

I wanted to make something a little different than the standard potato salad (russets, eggs, pickles and mayo) and this was it. We accidentally purchased low fat mayo for this and still got rave reviews! The bacon is key.

Peppy's Pita Bread

Good recipe, I use it all the time. I substitute 1/2 wheat flour to make it healthier, I also make more smaller ones to control calories. They don't always split really well, but can make great little pizza crusts if they don't. Just be careful to not let them get too cool when rising or flatten too much when transferring to cooling rack (on their way to the oven).

Lemon Custard Pudding Cake

Did NOT turn out well. I don't know if I did something wrong, but it was too custardy and not very puddingy (if that's a word). It almost had the texture of quiche on the bottom (disturbing when you are expecting pudding), and I pulled it out of the oven early! There wasn't enough lemon though I added extra- I won't be making this again.

Zucchini Cobbler

Fantastic! I actually made this for my brother in law because he is allergic to apples and he really didn't want to believe me that there were no apples in it! Everyone talked about it for days, and it was even requested at another get together! Great way to use garden zucchini in a creative way!

One Bowl Brownies

Always my stand by brownie recipe - though I skip the microwave and bowl and do it all in a saucepan on the stove and pour it right into the dish. Fantastic every time. I usually get creative and add chocolate chips (any kind) when you throw in the walnuts. AWESOME!

Creamy Au Gratin Potatoes

Not bad, but it does need a little more flavor as is. I sauteed the onions with garlic a little and didn't salt the potatoes. I also added fresh basil and some dried oregano on top of the second layer. I also used red, yukon and russets, a few more potatoes so I added another half the amount of cheese sauce. It took a while to get the sauce to thicken, I didn't want to scorch the milk, but it worked out to cook out the flour well. It did get nearly burnt around the sides and on the bottom (as if the cheese traveled down and bubbled to nearly fried), but it was still good. My husband said he's tried this recipe before and did not like it as is, but my variation was quite good. Just subtle flavor additions, nothing overwhelming. Oh, and I served w/ fresh chives on top.

Chocolate Cornstarch Pudding

Super tasty! I didn't know making homemade pudding would be so easy. I really am not a fan of the plainness and boring old pudding. But I really like this recipe! We may just be eating pudding a bit more often! Although, I will have to find out how to alter this for different flavors... =)

Blue Cheese, Bacon and Chive Stuffed Pork Chops

What the heck? This is really a little bit of pork wrapped around a crazy blob of blue cheese!! It was good- for the first bite, and then I couldn't taste much. A few bites more and my mouth began to numb... It could be good, but 2 oz per serving is WAY too much cheese. And it needs something creamy to improve the texture. The chives were totally lost, I didn't even know they were there, and the bacon was only apparent when it rarely outnumbered the cheese in a bite. Also, be careful- it's REALLY easy to overcook these chops (no real moisture inside). Could be good, with a few tweaks, but as is- blech. (no offense)

Bake Sale Lemon Bars

Really really good... I followed advice and doubled everything for my large pan (10x14), downed the sugar and upped the lemon juice. The crust was a little thick but a great compliment to the tart lemon. I got lots of compliments and recipe requests!

Spiced Beef on Pita Triangles With Fresh Mango Salsa

I didn't have all the ingredients, so I made up something similar. My husband loved it. The pitas didn't turn out so well (we overcooked them), but it was still pretty good.

Blueberry Zucchini Bread

Pretty good, I don't think that either the blueberry or the zucchini shine more than the other. They just sort of get along really well, and make a tasty bread. I didn't add the topping- cutting calories- and it was still really good.
