Ultimate Chocolate Chip Cookies

Great taste, but a bit thin. These were highly temperamental. I overcooked the first batch even at 8 min. Then I took the temp down to 350. Then watched them like a hawk, checking every minute after 5 and they were done in 9 (so I was able to test the flavor and chewiness with one good batch). The next ones overcooked at 7 min with the oven down to 325. Too much hassle, they aren't THAT good. I have a better chocolate chip recipe.

Onion Rice

Pretty darn good! I think I would play around with different onions and different kinds of rice and probably add some more veggies (maybe fresh spinach just before serving). As it is though, very good.

Graham Crackers

These are really good and I've made them so many many times- great for kids to shape like sugar cookies and decorate. You don't have to worry about them eating the dough because there aren't any eggs! Better than store bought, but difficult to get consistent in thickness without a lot of practice. Tastes great regardless!

Lemon Macaroon Tartlets

Very very good. I didn't have a 24 mini muffin pan, mine was only 18 so they were a little full (I had to scoop out the middle to make room for filling). If you only have 18 either multiply the recipe by 1.5 and do two pans worth or save some batter and do a second batch of another half (fill the remaining cups w/ some water). I also found this incredibly sticky and I couldn't use my fingers. I sprayed the back of a measuring spoon for every cup w/ cooking spray. This was a bit of effort, but pretty darn tasty, especially to the coconut lovers in my family. I filled them with the lemon curd from this site (amazing).

Scrumptious Strawberry Shortcake

Good but not fabulous. The shortcakes tasted much like any other from scratch biscuit like shortcake I've had. I'll use this again, but it's not "heavenly."

Lemon Curd

Really really really really good. Just the right tartness and sweetness combined. I was looking for something that would set a little better, but I may not have cooked it quite long enough (I was afraid of ruining it). I used it as a filler for the Lemon Macaroon Tartlets from this site- Exactly what I was looking for! Would make a fabulous filling for a meringue pie!

Cinnamon-Raisin Granola

Not the clumpy granola I was looking for- I even added more brown sugar and oil than required. I also omitted the coconut and added a handful of sliced almonds. It is really brittle and falls apart to the touch. It was nice warm and fresh (I had it on yogurt), but I don't think I would make this again without many alterations.

Blender Hollandaise Sauce

I found I had to throw this in a double boiler (well, my metal bowl over a pot of simmering water) for a few more minutes to be sure the eggs were cooked all the way and it was thick enough. I think my microwave didn't heat the butter quite enough to compete with the coolness of the other ingredients. I could probably skip the boiler if the butter was heated on the stove. (but I'm also pregnant and raw eggs are not recommended, so I decided to err on the side of caution this time around).

Delicious Raspberry Oatmeal Cookie Bars

I had to use up some plum pie filling (homemade) and I did not want to make another cobbler. It turned out great, except a little soft (filling moisture, not the recipe), I froze half for another treat later! We'll see how it fares...

Vegetarian Tortilla Soup

For what it is, this is pretty good! I think I would have liked it even more if I had used a medium salsa, but I stuck with mild for the kids. We love chicken so would probably add chicken the next round, but for vegetarian this had lots of flavor and was really easy to make!

Lime Fish Tacos

I substituted tilapia for the roughy/snapper and it was really good. I found it to be a smidge bitter, especially if you add a lot- which I had to to fill the tortillas (adding lettuce and tomato didn't seem to fill much). It's possible to play with the combo of sour cream and mayo until the bitterness is resolved. My children (age 1-6) said it tasted like chicken and they ate it all up!

Guinness® Corned Beef

I did not care for the sweet beer flavor- it would be best with one or the other. I cooked this on high for 3 hours and low for 4 hours, but only the bottom portion was fork tender- even after using two cans of beer to be sure it was covered. I also added the vegetables an hour before we were planning to eat as recommended and they were not done. I had to simmer them in a pot just before dinner. I would recommend that this be cooked a lot longer- probably 9-10 hours if possible (I also did 4 pounds like the recipe called for not 1 or 2 like most reviewers). My husband doesn't like corned beef and thought this was pretty good- especially the vegetables. I could be skewed though- I am pregnant and my taste-buds are a little awry.

Pumpkin Pancakes

When it's fall, we leap into pumpkins and incorporate them into EVERYTHING, if possible! These are marvelous pancakes, but apparently can be done wrong as my second attempt proved- 3rd, 4th all the way through probably the 6th or 7th time, they were again fabulous- I think it was the brand of pumpkin (beware of Santiam).

Gobble Up Granola Snacks

I prefer to use the corn syrup as the recipe states. Honey just overpowers the flavor so much. I also use whatever cereals I have on hand (mixing them up even), they don't always stick together that well but they sure are good!
