Mom's Zucchini Bread

Reviewed: Jul. 25, 2013
Pretty good, great texture. Followed exactly, except baked in 6 mini loaf pans (still had to cook for about 10 minutes longer). Haven't tried with modifications (wheat flour, applesauce/yogurt subbing, etc.) but will soon. One thing is for sure- 2.25 cups is a LOT of sugar for my family. I would definitely cut back, especially if I added other fruit or chocolate chips.

Sour Cream Pear Pie

Reviewed: Mar. 3, 2013
I haven't eaten this pie yet, but I know already that there is entirely too much butter in the topping. It's cooking into a big dripping (smokey oven!!) greasy mess already.... if it survives the smoked flavor, I'm hoping it will still taste good. Other than the puddles of buttery grease on top, it's still attractive. As long as it doesn't catch fire...

Costas French Market Doughnuts (Beignets)

Reviewed: Feb. 21, 2012
I had never had these before- always been curious since I saw Disney's Princess and the Frog. These are really good! Way too easy to eat though... but relatively easy to make too. This recipe is huge. I halved the recipe as is, only made them from about a third of the dough and it's SO many beignets! Oh, and I added a teaspoon of vanilla with the egg, as another reviewer suggested.

Puff Pastry

Reviewed: Feb. 6, 2012
Really good stuff! I don't have much experience with puff pastry, and I expected it to be difficult, but this recipe was easy and not too time consuming. The pastry has a very light and lovely flavor, filling it with anything would be great. I did the pinwheels from this site (spinach, parmesan and muenster- though I would use monterey jack next time instead) which were pretty good. But I had to make some without spinach for some people, so I sprinkled blue cheese and crumbled bacon on a portion of the pastry and that was fantastic! It's pretty easy, just roll out, sprinkle with whatever you want inside, roll up like a jelly roll, slice about 1" thick, lay on a cookie sheet and they bake up beautifully (400 for 15 minutes). Really good!

Spinach-Cheese Swirls

Reviewed: Feb. 6, 2012
Pretty good, I made my own puff pastry (from this site). I had to make some without any spinach for a particular guest, so I sprinkled blue cheese and crumbled cooked bacon on a portion of the dough-- those ones were fabulous!! I don't think the Muenster is necessary, you can't tell it's there, Monterey Jack has more flavor and is much cheaper so I'd use that instead next time.

Clone of a Cinnabon

Reviewed: Feb. 5, 2012
The roll itself is unbeatable- no other recipe can touch the texture and flavor, so fabulous. I don't put in nearly as much cinnamon, but the brown sugar also makes it spectacular. I also make my own icing, as I have for years without a recipe (it's probably very similar though).

Thai-Style Peanut Sauce with Honey

Reviewed: Jan. 24, 2012
Pretty darn good, the texture was great, most peanut sauces get lumpy (probably because this one is not cooked). I added another 1/4 cup peanut butter because it was too sweet as is. Next time, I think I would cut the honey in half or so and still add more peanut butter and maybe some chopped peanuts. Great on chicken and noodles!

Buttermilk Oatmeal Muffins

Reviewed: Jan. 24, 2012
I had left over oatmeal from breakfast so I used that with some yogurt instead of soaking the oats. Turned out great!

EVERYONE loves these! I have never had a bad batch and they are always requested! I used the cream cheese filling dropped in a pumpkin muffin, and it was incredibly delicious!

Almost too sweet, made it a second time with half bittersweet chocolate and it was perfect.

Cottage Cheese Perogies

I switched up the filling a little (using what I had on hand- leftovers) and these were pretty darn good. Can never have too much cheese though!

Libby's® Pumpkin Cranberry Bread

Reviewed: Jan. 7, 2011
I substituted half applesauce for oil, used 1/2 cup of brown sugar with 2 1/2 white and doubled the cranberries too. I didn't really measure the pumpkin (the rest of a 29oz can minus 1 cup), so there was probably more than 15oz. But these were great! My kids adored them- ages 7-2 and they all had 4-5 muffins each for breakfast! Great top, nice and sweet.

Candy Cane Cookies II

Reviewed: Dec. 6, 2010
I used the reviewer's suggestion with less almond and more flour. Good cookie, basically like a shortbread sugar cookie (a little odd). I decided I'm going to try to dip the cookies into the sugar/peppermint mixture while warm. Sprinkling on top only made them stick to the very top, creating a weird looking row of sprinkles, and a mess underneath the cooling rack. My kids like them, but I think it's mostly cause they look like a candy cane.

Almond Shortbread I

Reviewed: Dec. 6, 2010
Pretty good, but not so almond like. I think it needs more, and probably the nuts themselves to be really good. I have some left and am probably going to try to dip them in chocolate or something to liven them up a bit.

Magic Cookie Bars II

Really easy and really versatile. I used a combo of semi and dark chips (my husband loves coconut but not so sweet), added some nuts and they turned out like an Almond Joy!

Ultimate Chocolate Chip Cookies

Reviewed: Dec. 6, 2010
Great taste, but a bit thin. These were highly temperamental. I overcooked the first batch even at 8 min. Then I took the temp down to 350. Then watched them like a hawk, checking every minute after 5 and they were done in 9 (so I was able to test the flavor and chewiness with one good batch). The next ones overcooked at 7 min with the oven down to 325. Too much hassle, they aren't THAT good. I have a better chocolate chip recipe.

Onion Rice

Reviewed: Jun. 2, 2010
Pretty darn good! I think I would play around with different onions and different kinds of rice and probably add some more veggies (maybe fresh spinach just before serving). As it is though, very good.

Graham Crackers

Reviewed: May 4, 2010
These are really good and I've made them so many many times- great for kids to shape like sugar cookies and decorate. You don't have to worry about them eating the dough because there aren't any eggs! Better than store bought, but difficult to get consistent in thickness without a lot of practice. Tastes great regardless!
