Chef John's Perfect Mashed Potatoes

Followed recipe as written, and it was fantastic. I usually cut the potatoes into smaller pieces, but the technique shown here really improved the texture of the potatoes. Will keep this recipe for many meals!

Broccoli Cashew Salad

This is the closest I could find to the salad at the local grocery store; we tried to reverse-engineer the salad, and this recipe is fairly close to our guess; fantastic as a side dish or as lunch. My husband loves this, too.

Ground Beef Shepherd's Pie

I don't think I did things the right way for this. I hadn't made anything like this before, but I inherited a Dutch Oven and thought this might be a great dish to try. It turned out to be a gooey, greasy mess. I don't think I should have left the lid on during the entire baking portion, I probably used ground beef with too much fat, and even though I made a ton of mashed potatoes to go on top they didn't create the correct ratio of beef to potato to veggie. Overall, it was a bland-tasting, yucky, gross-colored first effort. My husband was a great sport, saying that it "wasn't too bad". I'm giving this a 3 because it seems many of the recipes I use through this site are bland, but the bulk of the problem was my error in preparation.

Easy Beef Stroganoff

I'm giving this a 3 because, when I prepared it as written, it was a bit bland. For the next time through, I'll do what other readers have done and add a few more spices. It was a nice start, much healthier than the boxed, processed items we usually eat. We love beef stroganoff, and this was a good base. Served this with egg noodles, warm corn muffins, and steamed broccoli.

Beet and Cucumber Salad

I used bottled beets; I was in a hurry and didn't want to make a huge mess. The flavors were bland, and my husband thought the eggs gave the salad a "weird consistency" with the cukes and beets. I thought it was good, but I would try to amp up the flavors somehow if I made this again.

Rosemary Ranch Chicken Kabobs

My husband (who gripes about eating chicken) loved this. It was easy for him to grill; I doubled the recipe for the sauce and used it for basting. We grilled veggie chunks - zucchini, green pepper, cherry tomatoes, and basted them with the sauce, too. I served this with the Zucchini-Cornbread Casserole as did another cook, and it was fantastic. Chopping all the chicken took time, so I might try cutting it into strips next time.

Zucchini Cornbread Casserole

I used more zucchini (5 cups) and baked it a little longer; we didn't mind that it was a bit mushy in the center. This was a hit with both the husband and the in-laws. I included 2 tablespoons Panko mixed with 1 tablespoon extra virgin olive oil as a topper before baking. I will include this with the easy-to-make items for family dinners.

Grilled Mongolian Pork Chops

I did not have all of the correct vinegars or ingredients for this, but I was interested in the direction of them. I used a raspberry-pomegranate vinaigrette dressing as the bulk of the marinade, some veggie oil, and S & P. My hubbie was very skeptical, thought it would be too sweet, but he was singing a different tune when he tried the end product. I used 5 boneless pork chops and served the dish with a spinach and cucumber salad. Very tasty meal!
