Squash with Tomato and Feta Cheese

As much as I love interesting mixes of flavors, in the end, I just didn't care for this. I served it at a fall dinner party as a side and friends reported that it was "ok" but not great. My husband and I did not really want to finish the leftovers.

Amazingly Easy Irish Soda Bread

The flavor was delicious and it was extremely easy to make. I made this for St P's day and it was a delight. However, I'm glad I wasn't taking it to someone else's house, because I did end up having to cut the big loaf in two and baking each half some more. I think it either needs to be made into two loaves, or the oven temp reduced and baking time increased. The outside was definitely done and even getting too done, but the inside was doughy and needed more time. I had to cut it in half, wrap the outsides with foil so they didn't dry out and burn too much, and cook for a bit more. Next time I'll make two smaller loaves from this recipe.

Jam Filled Butter Cookies

Very tasty and not too difficult. The only problem was that despite refrigerating the dough before forming and baking, my cookies went flat. That's disappointing in a thumbprint type cookie, but they were still good. I added lemon flavoring and used lemon curd instead of jam (from the easy microwave recipe on this site)--delicious!

Microwave Lemon Curd

This is absolutely delicious--so tasty and so easy. My husband and I love lemon, and this tastes very natural and full of lemon flavor. It was fast and easy to prepare. I strained it right after microwaving to remove the large bits of rind. I made thumbprint cookies and used this on top--fantastic. I still have some and will put it on plain yogurt as a snack. One of our new favorites!

Caramel Pecan Pie

Excellent! Per earlier suggestions, I used brown sugar instead of white, pre-baked the pie shell a little (5 min), covered edges with foil for the last 15-20 min of baking, and sprinkled a layer of mini chocolate chips on top (before baking). WONDERFUL!

Perfect Pumpkin Pie

The consistency and color were perfect. I added more spices than the recipe called for based on previous ratings, but I (who love extra spices) thought it was too spicy. I should have tried the original recipe first. Easy and turned out beautiful. I baked the crust for five minutes before putting the pie mixture in, then made sure to cover the edges with foil for the last 15-20 min. Perfect!

Feta Cheese Foldovers

These look very gourmet and impressive when served--they were a big hit last year as Thanksgiving appetizer and I will definitely be making them this year, too! I like to add fresh ground pepper and a sprinkle of cayenne. These are delicious!

No Roll Pie Crust II

Donna's Famous Cheesecake

This is a great and easy to make cheesecake. At first I also thought that there was not enough butter for the crust, but I hesitated to add more and add more fat. So I put the mixture in the fridge for ten minutes to chill, and then I was able to press down the crust beautifully and it worked great. Overall very good. I found the texture a little soft, even after a full day of chilling, but overall it is excellent!

Company Cauliflower

This was edible but nothing amazing. I added garlic and used flavorful cheese, so it wasn't as bland as the original recipe and according to many of the reviews. It's a nice way to prepare this veggie and I might make it again.

Easy Broccoli Quiche

Reduced the egg/milk mixture per earlier suggestions and added a dash of nutmeg and a dash of mustard...was delicious and easy! I cooked it for 40 min, browning the cheese to a gratin.

Chinese Napa Cabbage Salad

The flavor of this salad is just wonderful. I adjusted the recipe as following, though: toasted the seeds and almond slivers in a toaster oven without any butter; replaced the veg oil with light coconut oil; omitted the ramen noodles and flavoring altogether; added a splash of hot pepper-flavored oil; omitted sugar altogether. It was great!
