Yummy Meatloaf

This recipe was excellent! My husband isn't much of a meatloaf fan but LOVED this. The only thing I'd change is the cooking time - the time came out a little crispy so next time I'll decrease it by a bit. I will definitely be making this again! Thanks!!!

Awesome Slow Cooker Pot Roast

This is the best pot roast recipe that I've ever tried and is a keeper in my book! I've been searching for something that reminded me of what my mother used to make and this one hits the spot. As someone else mentioned, I think it's especially good served over white rice.. The rice mixed with the gravy is delicious!

Simple Spinach Lasagna

I thought this was good - but there seemed to be something missing.. I can't pinpoint what that "something" could be, at this time. It tasted good enough that I'll probably make this again in the future but maybe I'll tweak the it a bit such as by substituting ricotta for the cottage cheese as others suggested.. and maybe adding a bit more seasoning.

This was absolutely delicious! It came out a lot better than I was expecting. I served it with a onion rice pilaf and veggies which complimented it very well. Even my husband, who isn't a very big fish eater, thought this was great. I agreed with some of the other reviewers that it had a lobster taste.. My husband didn't quite think so but again, still thought it was great!

Mediterranean Lemon Chicken

This was juicy and packed with flavor! I mixed the marinade in a measuring cup, dipped (and rotated) the chicken in it and then spooned the rest of it over the chicken once it was in the baking pan. I thought it went great with rice. Delicious!

Oven Fried Chicken III

YUM! I love mayonnaise but was doubtful about how it would turn out with baked chicken. With so many good reviews, I was still tempted to try it and I'm glad I did because it was fantastic!!!! I used a package of drumsticks (which contained 5 pieces) and removed the skins from them. I started off with only 1/2 c. mayo, as other suggested, which was plenty... I also decreased the ingredients for the crumb mixture (I used plain breadcrumbs). I baked it for about 40 minutes at 350 degrees and it came out PERFECT. Very tender. You can't really taste the mayo and the crumb mixture had just enough of each seasoning. If you're thinking about trying this, I don't think you'll be disappointed.

Enchiladas Suizas

I give this 5+ stars - EXCELLENT! I followed the recipe almost exactly as is and wouldn't change a thing... I didn't have heavy cream in the house at the time, so substituted it with Half-and-half - it was close enough! It tasted very authentic and delicious. I will DEFINITELY make this again (and again, and again..) and highly recommend it.

Pepperoncini Beef

This is great.. however, I did make a few changes. I left out the garlic, so only added the beef with the entire contents of the jar of pepperoncini's. When it was done, I took the roast out of the crock pot, shredded the beef, and placed it back in the pot for about 30 minutes. This was PACKED with flavor! One of my husband's favorites.

Tater Tot Bake

I thought this was good, quick and easy to prepare. I took the suggestion of another reviewer and baked the tator tots, according to the pkg directions, before adding them to the casserole.. I didn't make any other changes. The mushroom soup seems to soften the inside layer of the casserole - the cheese, soup, meat and tator tots fused together and created a nice soft consistency (but not gooey) and flavor, while the tots on top stayed nice and crispy.

Tomato Chicken Parmesan

I thought this was "okay" but on the other hand, I'm really picky when it comes to tomato-based sauce dishes.. so, it wasn't as good as I was expecting it to be. My huband, on the other hand, LOVED it and kept on reminding me how great it was throughout the meal. As another reviewer, I pounded the chicken to get a more even thickness, which made nicer presentation. I used traditional spaghetti sauce but next time will probably just use a can of tomato sauce with Italian seasoning mixed into it, which would pretty much taste the same.

Oatmeal Peanut Butter Cookies

I thought this was a good cookie - as many others stated, soft and chewy on the inside. However, I thought this was a bit too sweet.. definitely something I had to have a glass of milk with. I added about a 1/2 c. chocolate chips to the batter. My husband thought they were EXCELLENT. I'm not sure if I'd like to make this again.. since my husband loved them so much, maybe I will.. and maybe I'll like them more the next time. But again, don't get me wrong, I thought this was very good. Just a little too sweet for my taste.

Tomato Fideo Dinner

I thought this was a great, quick and easy dish. I used vermicelli pasta in place of the fideo. My husband, who is Mexican, said that the pasta tasted just like the fideo that his mother makes and thought that the broccoli and sirloin was a nice addition to the regular dish. This has become a regular in our home.

Angel Hair Pasta with Shrimp and Basil

I really wanted to try this recipe last night but was short of some of the ingredients that it called for. I substituted the fresh herbs with dried, used regular cans of diced tomatoes instead of Italian style, and used prepared shrimp (decreasing the cooking time). It still came out great and my husband immediately gave it a 5. Next time, I'll definitely make it with the listed ingredients.. I can only imagine how much better it must be!

Baked Honey Nut Chicken

I thought this was DELICIOUS. Other than using boneless, skinless chicken breasts, I followed the recipe as is, and wouldn't change a thing. I used plain breadcrumbs and the honey added just the perfect amount of sweetness. Another reviewer commented on how they thought this was thick and heavy - but I found that not to be the case. I will definitely be making this again.

Libby's® Famous Pumpkin Pie

I used this recipe at first attempt in making a pumpkin pie and what a hit! It tastes just like store bought, if not better! This is the only receipe that I'll ever use for pumpkin pie again. You must try this - you will NOT be disappointed.

Caroline's Chocolate Fudge Frosting

This frosting is AWESOME!!! I used it to frost a double layer cake (using 2 9-inch pans) and it was more than enough. Like many others, a 1/2 c. of milk was all I needed... I should also mentioned that I used skim milk and the frosting still turned out great and firmed up nicely. In my opinion, it tasted just like store bought chocolate frosting. If you try this, you will NOT be disappointed!!

Strawberry Cake II

My husband wanted a strawberry cake this year, for his birthday, and after reading all of the positive reviews for this one, I decided to try it. I used 2 9-inch round baking pans, instead of 3 - and in my opinion, the batter is the perfect amount for 2 pans.. using 3 basically just gives you the option of having an extra layer for presentation. I followed the cake recipe, "as is", and thought it came out great... not too sweet, nor bland.. and it came out a nice bright pink color. However, I decided to use, "Caroline's Chocolate Fudge Frosting", also from this website, not only because of all the negative reviews for the frosting suggested for this cake, but my husband also wanted a chocolate frosting and the combination was delicious. I added sliced strawberries to the frosting in between the layers, as suggested by other reviewers.. Again, my husband and I thought this cake was great and I will be making it again in the future.

Carol's Arroz Con Pollo

I thought this recipe was EXCELLENT! It reminded me of a Paella that I had in Spain, minus the larger meat pieces (e.g. thighs, drumsticks, etc) and shrimp (worth mentioning for those interested some ideas) that the particular type that I tried had in it. I will DEFINITELY be making this again.

This recipe came out just as I had expected; GREAT. Even my 13-month old couldn't get enough of it! I used plain bread crumbs instead of Italian-style and it still came out very flavorful.
