Slow Cooker Casserole

Ham-Stuffed Manicotti

I thought this was great and so easy to make! Although it had enough of it, in the future I will double the amount of sauce. I also used finely diced ham instead of ground.

Pollo a la Crema

This was okay - but a little bland. Although it's very creamy, all I was able to really taste was the roux base. I would add some onions, bell pepper or some mushrooms as a previous reviewer did. Seems as if everyone who has made it thus far has also preferred to make some type of change to it.

Easy Corn Pudding

I used a can of gold and white corn in place of the regular whole kernel corn for a sweeter taste and added two beaten eggs to the mix as others had done. Came out awesome!

Wild Rice and Ham Casserole

This was good but I was not a fan of the sauce... which is just due to my personal taste because I'm not a fan of dijon mustard. Although this recipe didn't call for it, the soup/mayo/mustard mix produced a tangy dijon taste. Thanks anyway.

Slow-Roasted Beef for Carnitas

This smells fabulous while it's cooking and is SOOOO delicious! One of the best, flavorful Mexican recipes I have tried on this website. My picky 3-year old even loved it! I have yet to try Ronaldo's Beef Carnitas which this recipe is "based from" so I'll have to try that before chosing my favorite between the two.

Hot Cocoa Mix in a Jar

This is excellent and I thought it tasted rich and creamy enough with just boiled water. I used French Vanilla creamer as others had done and sifted the ingredients before mixing it all together.

Ham, Potato and Broccoli Casserole

YUM! I thought this was really, *REALLY* good! You would never think because of the simple ingredients but oh my! I used Kielbasa sausage in place of the ham. Next time, I will use tater tots, as others suggested, or sliced potato.

Broccoli, Rice, Cheese, and Chicken Casserole

Creamy, cheesy, and very good! I used a California baby blend of frozen veggies, and shredded cheddar (of which I also topped the casserole with). My only complaint was that it was a little on the bland side, which was easily fixed with a little salt and pepper.

Pecan Pie Muffins

LOVED these! I sprayed a mini-muffin pan with non-stick spray and getting the muffins out was a breeze. These are nice and crunchy on the outside, soft and chewy on the inside.

Pizza Subs

This was good for a quick and easy meal. I would suggest doubling the amount of meatballs, otherwise, you'll be left with a lot of extra sauce. Since the sauce was thin, I added a mixture of cornstarch and water to thicken it up.

Brazilian Chicken with Coconut Milk

I wasn't sure what to expect (with the combination of spices and coconut milk) but this was really good (and spicy)! I served this over rice and especially loved the coconut sauce, which I think was the best part of it!

Baked Chicken Nuggets

I liked that these nuggets were so easy to make and baked... but I didn't really like the addition of thyme. If I make these again, I'll leave that and the basil out as others have noted.
