Estrellita Salad

Mushroom Pie

This was SOOO GOOD and baked so beautifully! I took it to a potluck dinner; my dish was the only one to be completely cleaned and everyone wanted the recipe! After adding the cream, I cooked it until the cream was reduced... After placing the mixture on top of the first sheet of pastry, I brushed the edges with an egg/water mixture and then after placing the second sheet of puff pastry, crimped the edges with a fork. I didn't have any problems with run-off.

Cuban Ropa Vieja

We thought this was average in taste. I cooked this on high for 4 1/2 hours, after which it still wasn't as tender as I was hoping and was quite chewy. I agree that it could use some salt and I suggest using a boneless chuck roast rather than flank steak (cooking on low for 8 hrs), which I personally think would yield a much better result. It has potential!

Puerto Rican Meat Patties

We thought these were great and my husband especially loved them. My egg roll wrappers were too thin for me to wrap them in traingles so I had to improvise a bit. Next time, I will use the goya discs (which I also saw in the same freezer section) as others had suggested. I served these up with Mexican rice - excellent meal! Thanks!

Egg Salad Sandwiches

I love egg salad sandwiches but this just didn't do it for me. And although I like onions, I would prefer this without the onion flakes. I added some prepared mustard and a splash of vinegar, which is what I usually add to my regular recipe. It was nice to try a different variation of this recipe.

Mediterranean Marinated Chicken

*EXCELLENT* marinade! It was a rainy day so I broiled the chicken instead of grilling it and used apple cider vinegar because I ran out of the regular type. I followed the suggestions of a couple others and made a sandwich (and a wrap for my husband) with toasted bread, mayo, lettuce, fresh tomato and reserved marinade. I just can't emphasize enough how DELICIOUS this versatile marinade is. Thanks!!! Update, 5/16: I made this recipe as written (with white vinegar) and I prefer it using the apple cider type, which gives it a more fruity & tangy taste and scent. Extra dried tomatoes are also a plus!

Cabbage Rolls II

I can't really give this a fair rating because I cooked this on the stove top rather than in the crockpot. I also altered the recipe, using boiled, shredded cabbage and adding that to the rest of the mix. Nevertheless, it was a great combination and next time I will try it as written.

Spanish Rice Bake

I was impressed and thought this was very good!!! My husband however, thought it was too sweet. So next time, I'll omit the brown sugar and reduce the amount of chili sauce by half, replacing the rest with tomato sauce. A little tip for those that those that had a problem with the rice taking longer to cook or that it wasn't finished, it could be from stirring it around too often while the rice is cooking. I did not lift the lid from the pan while it simmered to prevent the steam from escaping (which is what cooks the rice) and it came out perfectly. Also, there's no sense in browing the meat and transferring it to another pot. Just start off browning the meat in a large pot and adding all of the other ingredients as directed.

I agree that this was very easy, very good and in addition, authentic! Considering that everyone has a different palate, I didn't find this very spicy so next time may leave the Jalapenos seeded.

World's Best Lasagna

I think my search is over! This is the best lasagna that I've made to date and it had the perfect consistency (I've had a problem trying recipes that were either too saucy or too dry). Although I didn't mind it, I do agree that it was a little on the salty side. So, the only change that I would make for next time is cutting out the salt, and using the canned tomato paste or sauce that doesn't have salt added.

Easy Tuna Casserole

I really enjoyed this dish! It had the classic taste and creamy texture that I have been looking for. As others had suggested, instead of using the Crm of chicken, I used 1 can of Crm of celery and 1 can of Crm of mushroom. I also doubled the amount of tuna, added 1 c. of milk, 2tbsp mayo, and 1/2 c. peas.

Country Breakfast Casserole

I loved this casserole. The taste reminded me a bit of sausage stuffing so next time I'll try making it with hashbrowns instead of bread, as others have tried. We topped it with some hot sauce for a little extra kick!

Barbecued Beef

Delicious!!! I only had 1/4 c. ketchup so used that and substituted the rest of it with chili sauce. The sauce was watery so after removing the meat to shred (and before placing it back in), I whisked in a mixture of 1/4 c. water and 2 tbsp cornstarch to thicken it. Thanks!

Chicken and Eggplant Alfredo

YUM! This is REALLY good. I only breaded and fried the eggplant and used leftover baked chicken instead of what the recipe called for and it tasted fabulous! However, make sure you thoroughly drain your eggplant on papertowels... I thought I did but had a pool of grease at the bottom of the casserole dish.
