Pan-Fried Asparagus

Outstanding!!! This dish took no time at all to prepare and was sooooo delicious! Even one of my sons, who hates asparagus, loved these ones! This will be a regular in our household from now on. Thanks so much Kim for sharing!

Roasted Duck

This is such an incredibly delicious recipe! I was skeptical at first, given the simplicity of the recipe. Anyway, this was a huge hit with my entire family. Next time though, I'll be making two ducks so there will enough for all four of us:-)

Fried Rice with Cilantro

Awesome recipe!!! My first attempt at making fried rice at home and it was gobbled up! I used pork tenderloin sliced rather thin. I also added frozen peas and sauteed one large chopped carrot along with the garlic. Also added scarambled eggs. Didn't have onions, basil or cilantro on hand but my boys did not miss any of these ingredients. They did however ask for extra soy sauce. Amazing all around!

This is one of the best recipes that I've tried given the time/quality ratio. Everyone loves this meal, and it requires so little effort! I use red peppers, and lots of extra onions. Purple onions instead of yellow is my family's preference by far.

Velvety Chicken Corn Soup

Wow is all I can say!!!! For the simplicity of this recipe, it really is outstanding!!! I added a lot of extra chicken - probably a full cup shredded. Also, I went way over on the egg whites - probably added around four. It was absolutely delicious and my teenage sons did not leave a drop for leftovers. Thanks abuch for this great recipe!!!

Sugar Snap Peas

This recipe is simply too great for words! I am a gourmet cook, and have found very few recipes that are really delicious to be this simple. I used the exact ingredients called for, but admittedly, didn't use perfect measurements. I probably used a little extra olive oil, just enough to coat the peas generously by tossing them on a foil-lined cookie sheet vs using a brush. I used fresh shallots generously, and had fresh thyme on hand, which I think is key to the wonderful outcome. As for the sugar snap peas, I cannot imagine anyone using frozen in this recipe, and thinking that it could possibly be a reasonable substitution!Thanks a bunch CJCOLLINS for this amazing recipe!

Chicken with Chipotle

Absolutely one of the best meals I have ever made given the simplicity. I even took a shortcut and skipped the blender. I just crushed the peppers coarsely with a wooden spoon while making the sauce. All my three boys gobbled this up and reqested it for lunch the next day. Simply OUTSTANDING!!!!

Spooky Halloween Eyeballs

These remind me so much of my favorite peanut butter ball recipe, which is the same except that it calls for semi-sweet chocolate instead of white chocolate. The recipe is time consuming, but worth every minute! I took these to a halloween party, and received rave reviews, not only for the presentation, but for how delicious they are!

Chicken-Prosciutto Bundles

This is a definite keeper! My family requests this all the time! The trick is to use fresh mozzarella and fresh basil and good quality Prosciutto (got mine at Costco and also at Trader Joe's). Do sautee the bundles until crispy and brown, and then bake foir 15 mins, as directed. You will not be dissappointed!
