Roast Pork with Cranberry Glaze

I too did this a little differently. I read that someone else had soaked the roast in brine first so I did that too (1 quart water, 1/4 table salt, 1/4 brown sugar, and some rosemary for a 1.5 lb roast). Instead of cranberry sauce I used some cranberry/orange relish that was leftover from Christmas. I combined the relish with the juice, sugar, mustard, and cloves. I roasted the meat for about 2 hours and then served it right from the oven (I omitted the cornstarch and water at the end of the recipe). The result was the juciest roast I've ever made with a delicious cramberry crust on top that tasted sweet and delicious. The roast had a slight rosemary flavor and was nicely complimented by the cranberry. This was such a hit that even my picky little 4 year-old ate it! I'm sure the original recipe that is posted is yummy, but the way I made it was so good I'll have to do it again this way next time.

Bob's Thai Beef Salad

Be careful how much fish sauce you use!!! Using a whole cup is way too much. I'll also say that I like fish but apparently fish sauce is not a good flavor for me. Personally, I thought it smelled like low tide. I won't be making this again.

Ribbon Pumpkin Bread

Loved the flavor of this bread. Very tasty although I couldn't taste the "ribbon" very well. As others have said, there is NO WAY that this can make 2 loaves. I ended up having to make a whole extra batch of the pumpkin batter to fill up my two pans. This might explain my inability to taste the "ribbon". Other than that, this is an excellent recipe that I will definately make again. Just be sure to double the recipe if you want two loaves!

This recipe is fantastic! I am fried chicken challenged and even I managed to fry up a batch that rivals what my mother used to make. I followed the recipe exactly and it really came out perfect. Trust me, if I can make this good, almost anyone can.

Sirloin Marinara

I was very pleased with this recipe. I could not tell that I had made it with spaghetti sauce at all! It was very tangy and flavorful. I tried to use one of my better wines because I was using store bought sauce but I think it would have been good regardless. I too made garlic mashed potatoes and it was awesome. My husband devoured it. It was VERY simple and quick to make too. No doubt that this will be a frequent dinner at my house.

Mexican Pork Chops

This was really tasty if you take the suggestions of others and add some extras. I rubbed the pork with fajita seasoning and chili oil and then let it sit for a few hours. I used black beans instead of kidney, added some chili powder and cumin and topped it with a Mexican cheese blend. Everyone loved it!

Turkey Enchiladas

I made these the day after Thanksgiving and my husband is still talking about them. I made it more like a casserole (layerd the tortillas) instead of making them individually. It was easier for me that way. Turned out great!

Peanut Butter Noodles

Amazing recipe! I wanted something with peanut butter with the hope that my 6 year old might stray from his peanut butter and honey sandwiches. It worked! This was sooo yummy that the adults AND the kids couldn't get enough. I'll be making this over and over again.

Caramel Apple Pork Chops

My 5 year old won't touch fruit and he eats ketchup on every meat imaginable. When I made this he actually ate the meat without ketchup and asked for more apples. It's a keeper for sure! I doubled the sauce mix too and it was just right.

Southern as You Can Get Collard Greens

My first attempt to make collard greens turned out pretty well. These were tasty but something about them seemed too greasy. Perhaps I used too many ham hocks, maybe it was the new chicken stock, one i had never used before. Regardless, these were still really good and I'll definitely make them again.
