Cambodian Tapioca-Banana Pudding

Positively delicious! I was searching for a non-smoothie idea to use up a partial can of coconut milk and some bananas and ran across this. I had no tapioca so I adjusted water and used plain rice. I also added a touch of vanilla and did not use salt. Surprisingly fabulous! I thought we would like it. I was not anticipating loving it. I'm eager to try the flavor combination but on a healthier grain as a breakfast option...maybe barley or oats.

Juicy Lucy Burgers

These are FABULOUS! It's a great seasoned burger even if you decide to leave out the cheese but the cheese makes it so yummy! I play on playing with all sorts of cheese flavors. It hink a good Stilton would be amazing. I recommend a really quality, thick Worcestershire sauce and not the cheap runny stuff. Makes a great addition!

Chantal's New York Cheesecake

Tasted divine! Mine did split on top but I didn't use a water bath. I'll go back to that, next time, but continue to use this recipe. Taste can't be beat. Perfect texture, also. I recommend making a day in advance. You really want it to have time to chill!

Banana Banana Bread

Really delicious. If you don't overmix, and don't have your butter too soft, then bread cooks up like a typical banana bread. Not light and fluffy but certainly not too dense. It has a great crust split across the top, too. Pretty to look and and wonderful to taste!

Quinoa and Black Beans

SOOOOO delicious! I only made a couple of changes and that's because I keep black beans cooked and in my freezer, so mine had extra garlic, onion, and some sausage. Will definitely make again, and again, and again...

Mother's Pot Roast

Ridiculous good and ridiculous simple! I didn't have tomato sauce so I substituted stewed tomates that I crushed as I put them in. I seared on stovetop, added onions, carrots, potatoes, parsnips, turnips and then put cast iron pot in oven at 300* for 4 hours. Won't ever go back to the more complicated, less successful roast attempts!!!

Chicken Pot Pie IX

Everyone loved this. I made a homemade crust and I think that's pretty key. Loved that there were no potatoes and they weren't even missed! I was also thrilled to find a pot pie recipe that didn't require cream of anything soup!

Clone of a Cinnabon

Perfect! We just had these for our Christmas morning treat and they are so gooey, sticky, sweet, and yummy! I planned on making as written but realized this morning I had no cream cheese (what!? I always have cream cheese!) so I substituted a little milk and plain yogurt. Cream cheese is probably even better!

Absolutely perfect every single time. Most amazing apple pie! The only things I do differently are more apples and I do a double crust rather than a lattice....both of which require a slightly longer bake time. Thanks!!!

Delicious! The only change I made was sauteing the carrot w/ the onion. I like the little extra depth of flavor. Don't skip the olive oil. It's sooooooo good and good for you!

Refried Beans Without the Refry

Super! Also a great, meatless bean recipe to serve with rice or cornbread if you don't cook them quite so long and don't mash them. We loved the flavor and I loved the healthiness of them! I made no changes. Great as is! Thanks!

Refrigerator Bran Muffins

I gave this 5 stars because I have made it exactly as written and they were very good. However, in trying to make them a bit healthier I made the following changes with a 3 star result: Used whole wheat flour, used splenda instead of sugar, used applesauce instead of oil. The taste is still good but they did not rise like I wanted. All in all, very good, though. Thanks.

Italian Sausage Soup with Tortellini

My entire family loved this! The only mistake I made...and I'm not going to dock a rating for my error...I used too much sausage by incorrectly reading the recipe. Flavors were outstanding and if I hadn't fouled up I know it wouldn't have been greasy but divine. Can't wait to make it again....correctly!

Chocolate Mint Cookies I

Everyone loved these. Made them exactly as written. Apparently my cookies were smaller than the submitters cookies because I got 7 dozen. At that size, 1/2 mint is plenty! I found there was no need for mint extract in the dough. I did find that it was necessary to cover it to chill. Otherwise it dried out and wouldn't roll well. Thanks!
