Crawfish Etouffee II

Very disappointing. I knew it would be when I saw there was no roux and no seasoning...how can this be considered a "true cajun recipe"?????? I will quit looking for a cajun shortcut and stick with what I know to be good.

Deer Jerky

Excellent and simple! Modifications: I was out of onion salt so I used minced onion instead and skipped the additional salt since there is so much in the sauce anyway. Also, used a dehydrator rather than the oven. Very, very good flavor. Better than any I've purchased anywhere. My son is THRILLED with how we jerkied his first deer! Thanks!

Mom's Apple Pie I

This is a great pie! Rave reviews at Thanksgiving dinner. My husband actually said it was better than "mom's". Thanks! The only thing I did differently than recipe was to put a dash of whiskey in some melted butter and brush the top of the pie...then sprinkled with a touch of cinnamon and sugar...just to crisp up the crust. I did this when there was only about 10 minutes left to bake.

Churros

5 plus plus plus! These were wonderful! I used a large pastry bag and a large star tip. I can't imagine trying to pipe the stiff dough from a ziploc with very good results. If the oil is right at 350* (I thought 375* was too high) they fry up nice and golden and not doughy at all inside. Thanks so much for a GREAT recipe!

Pear Butter

Lost a star because of timing in the recipe. If followed exactly it wouldn't have been ready. Needs a long time to cook. I added some cinnamon and cloves because they're spices I love. Other than that, followed recipe. I have not read many other pear butter recipes but I would caution following others in the elimination of the juice. Part of the canning science is achieving an acidic pH so you can safely can. The orange juice is not only a flavor but an acidifier. You need it to maintain a healthy finished product from a food safety standpoint.

Great-Grandmother Steinbeck's Johnnycake (Cornbread)

Just what I was looking for. Changes made: whole wheat flour, yellow corn meal, and milk soured with lemon juice since I had no buttermilk, cooked in iron skillet. Great texture and good flavor. Thanks.

Maria's Pepper Steak

Very good! I used round steak one each of a green pepper, red pepper, orange pepper, and yellow pepper. Ended up being really pretty. Everyone liked it. I think next time I'll try the sauce with chicken, broccoli, mushrooms, and water chestnuts. Thanks!

Peppered Shrimp Alfredo

Will make over and over again. I used slightly about 1/4 tsp Cayenne for heat but not too hot for my kids (who are sensitive). I also used 1% milk instead of cream w/ no missing the richness. I eliminated butter and added spinach. We just loved it!

Lush Pie

Pretty non-descript the first time I made it. The next time I tried it with the following variations and really liked it much better: 1) Crush oreos for the crust instead of the pecan cookies. 2) Instead of granulated sugar mix the 8 oz cream cheese with 1/2 c butter (no substitution), 1 tsp vanilla, and 1-1.5 c powdered sugar. 3) Top pudding with 1/4 c mini chocolate chips.

White Chip Chocolate Cookies

This is a delicious cookie!!! We made them today to set out for Santa. I think he will be verrrrrry pleased. The only change I made to the recipe was by misreading....I added the entire bag of white chips. I don't think it hurt anything. haha Next time I make it I will probably add a small amount of coffee powder (because I use that in almost everything that I bake that is chocolate) and I'll replace the vanilla with peppermint extract to see what happens. This is definitely a keeper!
