Chicken and Red Wine Sauce

Halved recipe for a family of 4 and have a bit left over. Simply delicious. Served with mashed potatoes and a saute of red peppers, onions, and mushrooms. Family loved it!

Best Tuna Casserole

Very good base. I would give it 5 stars w/ these suggestions for health and flavor: Use plain greek yogurt instead of more soup to make it a bit moister. I used 3/4 c. Make your own cr. of mushroom. Extremely simple, quick (we're talking 5 minutes) and MUCH better for you and those you love. Instead of potato chips, I crushed almonds in the food processor. Great crunch, when toasted on top. Thanks for sharing!

Mashed Potato Salad

My MIL mentioned eating this after we were supposed to make potato salad and a cooked the potatoes too soft. What a great mistake that was! This will be my go to potato salad recipe from here on. The only change I made was to eliminate green pepper because I did not have one and to slice hard boiled eggs on top since I had a couple in the refrigerator. I also used spicy brown mustard in lieu of regular yellow mustard. I highly recommend!

Roast Pork with Onion Stuffing

Pumpkin Turkey Chili

Stunningly wonderful. I had to add chicken broth to make it a consistency that we love for our chili. Without the broth it could have been eaten with a fork! I used garden tomatoes instead of canned and I added 2 cans of diced green chilis to suit our family taste. Will definitely make this a regular winter meal at our house. It's a superfood extravaganza!

Chicken Marsala

Delicious! Modifications - used only Marsala wine, no sherry. Didn't have sherry and didn't want to buy it for 1 recipe. I just used Marsala in it's place. Also, I doubled the recipe except for the butter and olive oil amounts. I kept those the same. Might have been oily if I had doubled. I can't imagine needing to add cream or milk for richness...the sauce thickened up well w/ the mushrooms and was SO flavorful. Will make again and again!

Fluffy Pancakes

These are delicious. I've made them for years. The only thing I do differently is add a little vanilla, use agave nectar or honey in lieu of white sugar, use whole wheat flour, and use olive oil rather than butter. If you want them REALLY fluffy you can separate the eggs and mix the yolks in as directed but whip the whites to stiff peaks and fold them into the mixture after it's otherwise all incorporated. This is not necessary but it's very good if you have the time and the inclination to dirty the mixer. :-)

Cambodian Tapioca-Banana Pudding

Positively delicious! I was searching for a non-smoothie idea to use up a partial can of coconut milk and some bananas and ran across this. I had no tapioca so I adjusted water and used plain rice. I also added a touch of vanilla and did not use salt. Surprisingly fabulous! I thought we would like it. I was not anticipating loving it. I'm eager to try the flavor combination but on a healthier grain as a breakfast option...maybe barley or oats.

Pear Butter

Lost a star because of timing in the recipe. If followed exactly it wouldn't have been ready. Needs a long time to cook. I added some cinnamon and cloves because they're spices I love. Other than that, followed recipe. I have not read many other pear butter recipes but I would caution following others in the elimination of the juice. Part of the canning science is achieving an acidic pH so you can safely can. The orange juice is not only a flavor but an acidifier. You need it to maintain a healthy finished product from a food safety standpoint.

Peppered Shrimp Alfredo

Will make over and over again. I used slightly about 1/4 tsp Cayenne for heat but not too hot for my kids (who are sensitive). I also used 1% milk instead of cream w/ no missing the richness. I eliminated butter and added spinach. We just loved it!
