Realizing a bit too late (after the seafood had been added) that I had scorched the roux for my Christmas seafood gumbo. So disappointing...and a very costly error that I'm now careful not to repeat!

Chicken and Red Wine Sauce
Halved recipe for a family of 4 and have a bit left over. Simply delicious. Served with mashed potatoes and a saute of red peppers, onions, and mushrooms. Family loved it!

Best Tuna Casserole
Very good base. I would give it 5 stars w/ these suggestions for health and flavor: Use plain greek yogurt instead of more soup to make it a bit moister. I used 3/4 c. Make your own cr. of mushroom. Extremely simple, quick (we're talking 5 minutes) and MUCH better for you and those you love. Instead of potato chips, I crushed almonds in the food processor. Great crunch, when toasted on top. Thanks for sharing!

Country Brunch Skillet
We really enjoyed. I cut up fresh potatoes rather than frozen hash browns.
