Classic Chili

I made this chili exactly by the recipe (with the omission of meat) and found the flavor to be quite bland. I do not like spice at all but I didn't expect it to be so bland. I pretty much doubled all the spices in the recipes, which ended up being a perfect compromise. I omitted the meat so added more vegetables such as carrots and some mushrooms cut up very small. All in all I will keep this in my rotation.

The Best Vegetarian Chili in the World

I started out with good intentions of just following the recipe as directed but it just didn't seem to be quiet right. It was very thick with the three cans of crushed tomatos. I had to add two cups of water to get the consistency right. The vegetable proportions were way off in my opinion. With the amounts the recipe calls for you could hardly tell there was any in the chili. I ended up adding an additional 1/2 onion. It still didn't seem to matter. If I make this again, I would add an additional medium size onion and an additional green pepper. I did make a few alterations to the recipe a, which I did not take into consideration when rating this recipe. Just a few personal touches I thought of along the way. I added four stalks of celery and a bottle of Samuel Adams beer. I also added extra chili powder and some cayenne pepper for an extra kick!

Stuffed Green Peppers

The mixture of flavors in this recipe were great. The black beans were a great addition to a traditional vegetarian stuffed pepper. The only reason I gave it four stars is because I had to make one alteration. I mixed tomato sauce in with the black beans and rice to give it a nice moist texture. As the recipe called for I also poured some over the peppers at the end. If I did not add tomato sauce to the filling I think the peppers would have come out very dry on the inside.

Grilled Marinated Shrimp

Excellent recipe! My charcoal wouldn't light on the grill so I broiled the shrimp. They still turned out great! I saved the left over marinade to pour over angel hair pasta. My husband loved it!

Awesome Bow Tie Pasta

I love this salad! I love the tangy taste of the balsamic vinegar. I am a big fan of black olives so I added them to the salad along with two additional green onions. I also cut back on the amount of pasta I put in the salad. I tend to like a lot of dressing. This is definitely going to be on my list of great summer salads!

Ham, Potato and Broccoli Casserole

I omitted ham in this recipe to fit a vegetarian diet. I also used four idaho potatos instead of french fries. I microwaved the potatos for 20 minutes so it wouldn't take so long to cook. This was a very easy to prepare and it was quite tasty. If you omit the ham make sure you salt the dish.

Brazilian Black Bean Stew

What a unique twist of flavors and ingredients. I am a vegetarian so I omitted the meat but cooked up the sausage separately so I could add some to my husband's dish. I also added celery to the list of ingredients and put one pablano pepper instead of the jalepeno pepper to decrease the spice level. This is a recipe that will be on my top 10 list! Roasted Vegetable Lasagna

I LOVE this recipe! My husband doesn't care for Eggplant so I just added more mushrooms and zuchhini instead. It turned out great! This recipe is a keeper! Absolutely delicious.

Spaghetti Squash I

This was my first time cooking Spaghetti Squash and I didn't know what to expect. I was happy with the flavors but the texture of the squash was crunchy and hard. I am not sure if it was supposed to be that way or maybe I didn't bake it enough. Maybe I'll try it again.

Chicken with Tomatillos and Poblanos

Thanks for submitting this recipe Suzanne! I made it for dinner last night and my husband loved it! He couldn't stop raving about how great it turned out. I did make a few modifications. I added some additional chicken broth it to give it enough juice to simmer in. I also added some lime to add some additional flavor. I will definitely be adding this to my recipe box.

Marinated Grilled Shrimp

I wasn't that excited about this marinade. I ended up adding extra red wine vinegar to dull the taste of the tamato sauce. I wouldn't make this again. I really didn't think the tomato sauce and red wine vinegar went good together.

Chili-Lime Chicken Kabobs

I can't give this enough stars!We grilled out last night and my boyfriend asked me for this recipe so he could use it again. I didn't have time to marinade the chicken very long. Probaby 20 minutes or so. I can't imagine how flavorful the chicken would have been if I had marinated it longer.

Chicken Cordon Bleu II

The sauce was superb! Absolutely a pleasure to taste. My fiance loved this dish a lot. He was very impressed with the way it turned out. I followed the recipe to a tee. The only problem I had was that most of the cheese melted out of the chicken and I had to put another slice in each one after they were finished cooking. Other than that, a must for my recipe box! Thank you!

Ricotta Gnocchi

I didn't have time to make the Gnocchi so I used a store bought package. I did, however, use the recipe for the sauce and it turned out great. I cut back a little bit on the mozarella and added twice the amount of garlic. I served it with breadsticks.

Black Bean Tortilla Casserole

This recipe is a keeper! I only changed one thing. I didn't drain the can of diced tomatoes and it turned out moist and delicious. I also added sour cream as a topping. I forgot to buy garlic so I just added some garlic salt. My boyfriend absolutely loved it.

Not Red Spaghetti Sauce

This dish was amazing! I followed the directions to the tee and it came out perfect. This is something I would expect to find in a fine italian restaraunt. The flavors were so rich and tasty. The mushrooms absorbed the flavor of the wine and it came out so delicous. I did add some fresh oregano and seasoned with salt and pepper as well. I served with a spinach salad and italian dinner rolls. Bravo for submitting such a great recipe!

Chicken Enchiladas I

Definitely a five star recipe! I made this for dish for my boyfriend and he was very impressed. He loves his food very spicy though, so I trippled the amount of chili powder. I also added a couple more cloves of minced garlic. For side dishes I made long grain white rice and mixed a can of mexican tomatoes and chili peppers. I also served mexican beans. I would definitely make this again! Thanks for the reciped Debbie!

Summer Vegetarian Chili

This is a must have for my recipe collection! I made it for my boyfriend and he LOVED it. The mixture of vegetables in this recipe was delighful. I didn't have the mushrooms and it still turned ot great. My boyfriend likes really spicy food so I added a tablespoon or so extra and also some red pepper. It was perfect! I served it over rice and it made for a very hearty meal. I would definitely make this again. It was the best vegetarian chili I have attempted to make.

Tofu Stroganoff

This was a really tasty way to make stroganoff minus ground beef. I made it for my boyfriend and even though he isn't the biggest fan of tofu he loved it! I did make some minor adjustments to the recipe because I didn't have cottage cheese on hand. I used ricotta cheese and extra sour cream with about a 1/4 cup of milk. I did add a little more soy sauce than the recipe called for. Just an fyi- make sure to put butter on your egg noodles after you drain them so they don't stick. I forgot and had clumps of noodles. :) I would make this again and try it with the cottage cheese.
