I'm going to school for nursing and have two awesome kids, an 8 year old daughter and a two year old son. My daughter is type 1 diabetic and it has become a passion of mine to find healthy recipes that taste good for the whole family.
My favorite things to cook
Lasagna has been a favorite food of mine for a long time. I like finding different/healthier ways of making it. Butternut squash lasagna with caramelized onions is to die for.
My cooking triumphs
I would consider any time I'm able to recreate something I've really enjoyed at a nice restaurant a triumph!
My cooking tragedies
Hmmm, I can't think of any one specifically, but I've definitely set off the smoke detector a few times..

Mango Tofu Tacos
This recipe sounded so crazy I had to try it. I found a peach salsa at the grocery store that went perfectly with it. Even my picky 9 year old liked them. We still ended up having a lot of left overs, I think it serves more like 6 people.

Bacon Cheddar Jalapeno Cornbread
This was fantastic! I was hesitant about baking it in the skillet but it turned out great, my friends and I were impressed. Definitely will make again!

Curried Butternut Squash and Pear Soup
This is probably the best butternut squash soup I've ever tasted. I've made it like 3 times now, and the last time I made I didn't have any half and half so I put in an entire can of coconut cream. Delicious.
