Cassie's Zucchini Brownies

I loved these brownies. I have made them twice, and while they turned out different both times, both ways were great. I first time I made them I dried the zucchini well and it resulted in a fudgy brownie. The second time my zucchini had more moisture in it and the result was a more cake like brownie. I can't wait to see what I get the third time!

Yummy Blueberry Cobbler

This definitely lives up to its name. I agree with the other reviews though, you can really cut down on the sugar that is called for. I use 3/4 cup on each part (1 1/2 total for the whole recipe) and it comes out great. And that is also using wild Alaska blueberries which are alot more tart that the kind you buy at the store. My mom has made this same recipe using rhubarb for many years.

Zucchini Brownies

I've made these lots of times and they always end up great! I don't frost them - I just sprinkle chocolate chips on top of them before baking.

Tater Tot Casserole

Lip-smacking Popcorn Concoction

good recipe! I popped my own popcorn instead of using the microwave kind. And I used peanuts instead of almonds. Very versatile recipe!

Chinese Fried Noodles

Good recipe. I stir fry all the vegis together to make it easier. I also use three packages of noodles but only 1 packet of their seasoning. Great recipe to tweek to your own tastes.

Cranana Jam

Neat recipe, but I personally thought it turned out too sweet. I guess I was thinking that because it was cranberries it would have there great tart flavor - but it didn't. Maybe my bananas were too ripe - I took some overripe ones out of the freezer to use. I'll probably make this recipe again, only with less black bananas!

Green Salad with Cranberry Vinaigrette

Great recipe. I added about 1 Tbsp honey to the dressing and it was perfect. I used feta cheese, and also added some craisins, pears & granny smith apple along with the red onion and almonds. I also used spinach for half of the greens. I'll surely be making this one again!

Finnish Kropser (Baked Pancakes)

Yummy! I did like others suggested and cooked this at 400degrees for 40 minutes. I also took another suggestion and added blueberries. One observation - this doesn't serve 24 if you are serving it as a meal. I served 4 kids and 1 1/2 adults and it was gone. My only complaint is that it was hard to cut. But I will definitely be making this again - thanks for the recipe!
