Roasted Beets and Sauteed Beet Greens

The greens were great. This was the first time I ate Beets - they weren't bad - I just don't think they were cooked long enough - definatly needed more than an hour.

Santa Fe Corn on the Cob

I was hoping for more flavor to come out. Still added butter to corn after it was done. I will try again - but next time brush more onto the corn.

Orange Crunch Cake

This was hit at easter! I put the crunch layer in the middle only. I didn't have the correct ingredients for the frosting so I just added some orange juice and orange zest to some vanilla frosting - turned out great!

Tender Breaded Turkey Cutlets

This was a good cutlet recipe and I will try it again. However, I have a skillet that has a raised bottom. Because of this 1 TBLS of Oil was not enough and it just didn't brown up right. Next time I will use a flat skillet or bake it. Very moist though.

Perfect Pressure Cooker Pot Roast

Very good recipe for an inexpensive cut of meat. I did mine in the crock pot - let it cook for 8 hours. Leftovers made great hot roast beef sandwiches. This one's a keeper!

The Perfect Hot Artichoke and Spinach Dip

Veal, Chicken and Beef Canelloni

Awesome! Made for friends, everyone loved it - even the picky eater. Realitivly easy to prepare considering it's listed under gourmet. Will definatly make again & again!

Edible Spiders

Agree with the microwaving the chocolate thing - it wouldn't melt right for me. Ended up just putting chocolate chips, butter and some milk in a saucepan over low heat to get right consisitancy. Once chocolate was melted everything else was smooth sailing. The kids loved the looks of them for their holloween party!

Mexican Corn

Very good & very easy. I used frozen corn - didn't even cook it first - threw everything in at once. Also used jarred jalepeno peppers - just happened to have them on hand. Definatly not "healthy" veggie dish, that's why it was so yummy.

Black Bean and Couscous Salad

Good change to traditional BBQ salads. Everyone loved it. I bought the Near East Garlic & Olive Oil flavor couscous. Then mixed the spice packet in with mixture to give it some extra flavor. Easy to make also!

Chocolate Cappuccino Cheesecake

Made this for Easter, was the only dessert with no leftovers - even the kids ate it up. Mine did crack though despite the water bath & all. Will definatly add to my cheesecake favorites. One person thought tasted salty.
