Moroccan Lentil Soup

With all the spices, I expected the flavor to be a tad stronger, but I still really liked it. When I made it a second time, I substituted the cardamom with yellow curry and it was really tasty, and I think I prefer it that way!

Cajun Chicken Pasta

Since I'm lactose intolerant, I substituted the heavy cream with 3/4 cup of Lactaid skim milk and 1/3 cupmargarine. (that probably cuts down on the fat a lot!) I didn't use mushrooms, and used creole seasoning instead, and it turned out fabulously. This is an excellent recipe.

Peanut Butter Noodles

I used chili powder instead of the paste. Crunchy peanut butter works if you want to skip buying the chopped peanutes separately. Ground ginger is a good substitute. I like to add zucchini, red pepper and/or chicken +a touch more peanut butter, and it is absolutely delicious!

Spinach and Potato Frittata

I've made this twice, and found it to be all right, but not one of my absolute favorites. I like the suggestion of adding broccoli. I too have also added more spinach. The last time I made it, I only had 5 eggs, and it still turned out fine.

Lana's Sweet and Sour Meatballs

I absolutely love this recipe. I use just over a pound of beef and end up making slightly bigger meat balls to where the sauce amount works out okay between them and the veggies. The larger meatballs take longer to cook, but it's worth it. I serve it over rice, but also once with cous cous, and it was all right. I didn't have any green peppers once and left them out, and it made the sauce too sweet, so don't skip those!

Deep Dish Brownies

These are excellent! I cooked them in a regular 7x11 inch baking pan, so they weren't exactly deep dish, but still tasty! I also added chocolate chips once, and that made them even better!

Slow-Cooker Pepper Steak

I was somewhat disappointed with this. Perhaps there might have been some error in my preparation, but I am pretty sure I followed the directions well. Something about the sauce flavor, I didn't like, and it seemed like I ended up with too many peppers. Overall, I thought this was only so-so, and if I were to make it again, I'd try a variation to maybe suit it more to my tastes.

Glazed Meatloaf I

This is an excellent meatloaf. I just made it last night, and accidentally ended up putting the whole sauce mixture into the beef mix. The end result made it a tad crumbly, but it was still tasty as ever. I also added a little bit of pepper to the mix, and I'm sure that green peppers would be good in there too. I have served this with both garlic mashed potatoes, and then last night with peppered green beans. This was a very easy, quick dinner!

Caramel Filled Chocolate Cookies

My family couldn't stop eating these, even my grandmother who is not supposed to with her dentures, haha! With my slight inexperience in baking, it was slightly difficult for me to make, but that's my fault, not the recipes. I'm sure it's much easier each time you do it! I have also made them without the caramel because I didn't have any in the house. Still chilled the dough. They were good-- not AS good-- but still tasty!

Honey Roasted Red Potatoes

These are great... I have used both red and Idaho potatoes and they're both good. I double the sauce mixture, but I think I'm using a bit more potatoes than the recipe calls for, so it works out. I used regular brown spicy mustard in the mix instead of powdered mustard, and I think this makes it even better!

Love making this... though over time I've made a few substitutions. I used the Kraft Parmesan cheese stuff instead of feta, because I am lactose intolerant and the other stuff is lactose free. I've used spinach instead of parsley, and I always use beef instead of lamb (don't like lamb). Still, very tasty!

Cream Cheese Sugar Cookies

They were a tiny bit too chewy for me, but I still really liked them. I topped them with a walnut piece, and since I didn't have vanilla or almond extract (really, I was just trying to use up some cream cheese)... I used mapeline instead. Still very good, almost maple bar-esque!

I really thought I was going to like this, and I was pretty disappointed. I think perhaps it was too much basil-- maybe I'm just not much of a basil fan, I don't know. I did add some potatoes, which helped, but I don't think I'll make this again.

Extra Easy Hummus

I had been looking for a hummus recipe that was easy, and this definitely fits the bill. I also added some cayenne pepper, and then a little extra water which made it more like a soup. Very good.

Baked Ziti I

I loved this dish! Changed it only slightly-- no provolone cheese, just did all mozzerella, but didn't make it really cheese-heavy. I used fat-free sour cream (only 16 oz. cos it seemed to be enough) At first I thought "I don't know if this is all going to fit in the dish!" but it did! We ate it for dinner and then leftovers for lunch the next day-- reheats in microwave fine! I also added some additional Italian seasoning and a dash or two of garlic powder.

Turkey Empanadas Grande

I was glad that I looked at the other cooks' tips, and I also used salsa instead of tomatoes. Made the meat mixture very tasty and little extra spicy since I used medium salsa. For some reason I ended up with too much meat mixture and wasn't able to use it all in the pie crusts. However, I saved it and used it in regular tortillas for lunch the bext day. Very tasty-- I had been looking for an empanadas recipe that didn't have pork!

I use lean ground beef, leave out the olives (don't like them), and use my lactose-free cheddar, and it's a good meal. Does last forever in a small household, so it re-heats well for leftovers!

Sloppy Joes II

I am always really pleased when I make this. I usually do a full cup of ketchup though, just to make it a tiny bit "sloppier" as one other reviewer put it. I add a little bit more mustard than reccomended. I've used both Spicy Brown mustard and "Sweet and Tangy" mustard, which are both excellent.
