Corn and Black Bean Salad

Pretty tasty, although I wished I had some sweet pepper and green onion to add like other reviewers suggested. I used frozen corn that I cooked up first instead of canned. Also, I used 2tbsp of tomato-flavored balsamic vinegar and 2 tbsp. of regular, and it made for a different-but-good flavor. I used canola oil instead of vegetable. Aside from chopping the cilantro, which I'm not very good at, this was easy to put together and we ate with the marinated flank steak recipe on this site. My 2 year old enjoyed eating this as well.

Marinated Flank Steak

I scaled this to 1 lb. of meat. For some reason (due to our inability to grill anything correctly, I think), I couldn't taste the marinade much at all on my steak, but my husband said that his was delicious and that we should definitely use the marinade again. The only thing I changed was using canola oil instead of vegetable, and I know we'll give it another try.

Oatmeal and Wheat Flour Blueberry Pancakes

Really good, and man that's a lot of fiber! I left out the blueberries this go around and they were still good. I subbed canola oil instead of olive oil, and skim lactose-free milk instead of soy, and it worked well. I made a double batch and froze them individually wrapped to pop in the microwave later as needed.

Lumpia (Shanghai version)

I am going to have to rate this on filling alone because my spring roll wrappers were horrible. Well, first I tried to make them myself, which was sort of a failed experiment. Then I bought the first ones I saw at the store, which had a taste similar to what Elmer's glue must taste like. So instead, I cooked up the beef and the onion and combined it with the rest of the ingredients. I added 1 tablespoon of roasted red chili paste and layered it between two layers of sliced potatoes in a large round casserole dish. I baked it in the oven for 45 minutes at 400 degrees, covered. It turned out great. The reason I am knocking off a star though is that there is no need for additional salt when you already have soy sauce. I used lite soy sauce alone and it was plenty salty. If I ever get the hang of making spring roll wrappers, I will try this as listed.

Carne Guisada II

This hit the spot. I doubled the recipe and served it over mashed potatoes. I didn't add any additional salt though, and I used jalepenos instead of serrano peppers. I added some sliced sweet onion and cooked everything in the crock pot for around 11 hours, so I skipped the oil and the browning. The leftover gravy I plan on using over hamburger and either egg noodles or more mashed potatoes tonight.

English Royalty Chocolate Chip Scones

My husband made these, so I'm not sure what exactly he did to fix the liquid amounts on these, but he said that there was not nearly enough liquid ingredients to stick everything together. I think he had to add a lot more orange juice and butter, but whatever he did turned out great and we gobbled these right up. He also added a little bit of shredded sweetened coconut. Good ingredient ideas, but recipe needs some tinkering.

Spanish Rice Bake

I left out the additional salt since the canned tomatoes and the salsa I used instead of chili sauce have plenty of salt. I also added about a tsp. of chipotle hot sauce and used monterey jack instead of cheddar. All three of us loved this and it was very easy, even though it created a lot of dishes. On making this again, I found a way to lessen the dishes used-- cook and simmer everything in a deeper oven proof skillet. After your rice is done cooking, just top with cheese and put it directly in the oven. Using leftover enchilada sauce also works in place of the chili sauce.

Beezie's Black Bean Soup

This is probably the best black bean soup I have made on here. I definitely reccomend using veggie or chicken broth in place of water. I halved the recipe and it still made around 6 generous servings. However, in halving it, I still did 1 full carrot, 1 full (but not large) sweet onion, and 1 stalk of celery. I also did an extra tbsp. worth of red lentils because 1/8 cup hardly seemed worth it. The rice, I also kept at a 1/2 cup. It took a bit longer than 20 minutes to cook-- more like 35, really. I was out of cumin, so I used cilantro. Overall, this was delicious. I had no trouble with the beans softening up and I followed the directions listed.

Rosemary Turkey Meatloaf

I scaled everything to 1 pound of turkey and had to sub dried rosemary-- unfortunately I used a bit too much and the flavor was overwhelming. Still, even if I'd not overdone it, this was still really rich-tasting. I only did 1/4 tsp of salt. I found the mixture to be really goopy and I had to add extra breadcrumbs to hold it all together. I liked the balsamic vinegar in there, however. I didn't have tomato sauce, so I used ketchup instead. The sauce was kind of the best part-- but I could use it on any meatloaf. Overall, this was so-so.

Pam's Beefy Spanish Rice

This was good, but I made some changes. I only had ground turkey, so that was a good substitution. I was out of cumin, so I decided I would add 1/2 cup of medium salsa in place of the ketchup. Because of this, I only did half an onion. My peppers were a mix of red, yellow and green that I already had cut up. I did not add the additional salt, but I did up the pepper to 1 tsp. Also, I subbed dried cilantro (2 tsp) and added it when I added the other ingredients. Finally I used brown rice instead of white (didn't have enough white), so the cook time was closer to 50 minutes. I mixed in 1/2 cup of reduced fat sharp cheddar cheese in the last 5 minutes. Overall, easy and tasty.

Fish Tacos

I suppose I'm mainly rating the beer battering. I changed so much otherwise. I used Henry Weinhard's Private Reserve for the beer, and I used sole for the fish. Instead of deep frying it, I pan fried it in margarine and then broiled for about 7 minutes to finish off the cooking process. As far as the sauce goes-- I ended up doing fat-free sour cream with salsa, oregano and lime juice mixed in. It was kind of plain, but good. My lettuce I was going to use unfortunately went bad before I made this. So all in all, it was plain as a taco the way I made it, but the fish itself was good.

Spicy Beef Curry Stew for the Slow Cooker

Really delicious! Instead of curry powder, I did 1/2 tablespoon of red curry paste and 1/2 tablespoon of roasted red chili paste, omitted the jalepenos and it was still plenty spicy. I skipped the first stovetop step entirely. Just put everything in the crockpot and let it cook for nearly 10 hours on low. The beef practically shredded itself. We ate it over basmati rice to which I added turmeric and black pepper for color. Highly reccomended.

Chicken and Bow Tie Pasta

I used a mix of peppers that I already had cut up, green, red and yellow. I also omitted the extra salt, but did add plenty of pepper. The only complaint I really have is that I didn't use a big enough head of broccoli for this. Can't go wrong with more veggies.

Spicy Black Bean Cakes

Very good. I halved the recipe, so using one full egg made it a little extra goopy, but it turned out fine. I think the sweet potato dampens the heat of the jalepeno, so I was sorry that I left it out of the sour cream. I was low on cumin, so I did a little bit of that, a little coriander and a little cilantro and it was good. Ate this with wild rice.

Vegetable Lo Mein

This is really good! I don't like mushrooms, so I left those out and upped the peppers (which were a mix of green, red and yellow) and carrots instead. I also subbed ground ginger (a heaping 1/2 tsp.) instead of fresh. It definitely helped to cook this in my large electric skillet.

Tomato Spinach and Bean Burrito

I enjoyed this-- It was a little different and certainly fiber-filled. About the only thing I changed was adding a tsp. of cilantro to the mix and I used fresh spinach. I used fat-free sour cream as well. Keep in mind that this makes 4 very big burritos! Next time I might do only 8 oz. of spinach, just to balance the ingredients a little.

Delicious! I left out the mushrooms and upped the peppers, but pretty much left the rest of it the same. The only thing I wish I had done differently was use my large electric skillet because my pan on the stove was very, very full. Ate this over spaghetti noodles.

Turkey Nacho Bake

This is so good in a not-quite-so-bad for you comfort food way. I didn't have any chives, green onions or fresh tomatoes, so instead I mixed around a 1/2 cup of medium salsa in with the fat-free refried beans when I microwaved them and then left out the hot sauce. Instead of pkgd. taco seasoning, I used the Taco Seasoning I recipe on this site which is a 1000x better. However, I did not add the ingredients to the seasoning that were already called for in this recipe (like chili flakes and pepper). I left out the olives because I don't like them. Not having to chop anything up saved about 10 minutes on the total time, and I even grated my own cheese while the beans were heating up. I will definitely make this again.

Grilled Salmon with Avocado Dip

Delicious! I used fat free sour cream in place of the yogurt. Instead of salmon, I used sole filets and broiled them. It worked really well, and the dinner party I served them to really liked both the fish and the sauce!

Easy Red Pepper Hummus

I wasn't totally wowed by this, but I still liked it. I used lemon juice instead of lime, but kept everything else the same. It went over well at a dinner party and it was really easy to make.
