Four Cheese Macaroni

This was pretty good, but rich, and I even made it with lighter ingredients. I used low-fat margarine, low-fat cheese, skim milk and skipped the velveeta and just upped the cheddar. We all liked it, but after about 5 minutes of finishing, it really hits your stomach like a rock. I can't imagine eating it with the full-fat ingredients, but this is a good meal every once in awhile, and still better than some of the boxed stuff.

Charley's Slow Cooker Mexican Style Meat

This was good, but I think it would have been perfect with the addition of some cilantro, some fresh lime juice and a dab of sour cream. We shredded the meat and ate it in tortillas. I didn't add the additional cayenne (thought the chili powder and hot sauce would be enough) and I used anaheim peppers.

Coconut Lentil Soup

This was just so-so. I had to make some changes based on what was in the house-- brown lentils, regular milk, white onion, ground ginger. I used red curry paste instead of powder, which would have helped if I'd not over done it-- not the recipe's fault. However, I do think it needs coconut milk and not soy milk mixed with shredded coconut. The shredded coconut could still be added though, even with using coconut milk. Overall, a 3.5, but could be good with some tweaking.

Frijoles I

These were great. I cooked them for around 3 and half hours, so it took almost no effort to mash them with a large fork (I don't have a potato masher). I layered half the beans with tortillas, salsa and plenty of cheddar cheese and baked @ 350 for 20 minutes. It was delicious, and I still have the other half of the batch left for some other tasty dish. I will probably make my refried beans like this a lot now, rather than buying them in a can. The only change I think I made was adding less margarine-- I didn't strictly measure, but I think it was closer to a 1/2 cup.

Lisa's Easy Chicken

The general consensus was that this was one of the best things I've made. I even forgot to buy green pepper and chives. I used garlic powder instead of garlic salt. I added a little extra olive oil so I could use the extra sauce after baking on some penne pasta. The 16 oz. of pasta had my sub. for heavy cream-- 3/4 cup milk and 1/3 cup margarine, so with the olive oil and spices poured over it, it went perfectly with the chicken and I can't wait to make it again with the green peppers.

Beef Paprika

I wasn't too thrilled with this, but my husband really liked it. I think it would have been better with mashed potatoes instead of rice. I didn't really change much-- didn't add the additional salt and used spicy brown mustard instead of mustard powder. I maybe would make this again.

Rhubarb Bread I

This was very yummy. The only change I made was using 1/2 tsp. of nutmeg because I was out of cinnamon and it worked very well. I would definitely make this again. However, I needed about an hour for my loaves to finish and it was a touch crumbly-- still tasted great though, and that's the important thing.

Deep Dark Chocolate Cookies

Very good! Although, I ended up doing more cookie bars because after my first cookie sheet cooked too long (wasn't paying attention) and stuck to the sheet, I just poured the rest of the batter into a 7x11 dish and cooked for around 25 minutes. Very tasty! I left out the walnuts and it was still fine.

Exquisite Pizza Sauce

This was really good, though I admit I didn't use it for pizza! Instead, I doubled the recipe, but instead of two cans of tomato paste, I did one paste, one tomato sauce. I was out of honey, so I did a tablespoon of brown sugar instead and added about 1 1/2 tsp. of Italian seasoning. Simmered it on the stove. Served this over penne pasta, and it was spicy and delicious!

Tzatziki Sauce

This was pretty good. I added a little bit of sweet onion to blend in with the mix. I halved the recipe and it still made a lot. I didn't quite have enough yogurt, so about 1/4 cup of it was sour cream. I may have added too much dill and black pepper, but that is my fault not the recipes!

Authentic South Indian Biryani

Sorry, but I just wasn't thrilled. The rice turned to mush and the overall flavor was just so-so. It would maybe be helped by making the sauce and cooking the rice completely on the stove and skipping the oven part all together. Also, I'm glad I looked at the reviews to figure out when would be a good time to add the cilantro and mint.

This was great after a few small mods.-- I cut waaaay back on the additional salt. Used maybe 1/8 tsp. Also I used chicken breast cut into strips, just as a personal preference. I had to sub dried ginger and cilantro. However, we all loved this, my 2 year old included. I served it over basmati rice and I liked that it had some heat, but not too much heat. I will definitely make it again.

Chicken and Peppers with Balsamic Vinegar

This was pretty much perfect. We ate it over penne pasta and sprinkled a little parmesan on top. I used half regular balsamic, and half tomato-flavored balsamic and it was delicious. I know I will make this again.

Easy Mashed Potato and Roasted Vegetable Enchiladas

This makes a ton! I definitely had 12 very full burrito-sized enchiladas that I had to use two baking dishes for. However, everyone I served them to really seemed to enjoy them. I don't like mushrooms so I did two heads of broccoli instead. I also added one medium onion, coarsely chopped. I made my own mashed potatoes (used red potatoes) and made my own enchilada sauce using a recipe off of this site. These were very filling and tasty.

Spicy Shrimp Creole

Delicious and not TOO spicy. I scaled the recipe in half but still used the full bay leaf. I realized too late that my onions were rotten, so I had to use dehydrated onions instead (just eyeballed the amount), and it worked out. I omited the extra salt and served this over brown rice. We all loved it.

Raspberry Cheesecake Stuffed French Toast

The only change I made was using half brown sugar and half white. I found there to be an excess of both the egg mixture and the raspberry mixture, but then maybe my loaf of French bread was smaller, I don't know. We came up with 7 'sandwiches' from it. Still, excess aside, this was delicious. I wouldn't eat it all the time (can only take that much sweetness here and there), but it's definitely a lot more fun to make this yourself and not have to go to ihop.

Chap Chee Noodles

I'm rating this on the sauce because I didn't use the meat or the specific vegetables and I used some egg noodles instead. I used a premade bag of vegetables with pea pods, water chestnuts, peppers and other misc. stir fry vegetables that worked well. The only thing I changed about the sauce was doing brown sugar instead of white, and I added a tsp. of roasted red chili paste for good measure. The sauce was simple and delicious. I look forward to trying it with meat and more authentic noodles and veggies. Oh and skip the additional salt-- you don't need it.

Oatmeal Whole Wheat Quick Bread

I had to keep myself from polishing off the loaf before anyone else had a chance to try it. I didn't bother grinding the oatmeal-- the texture changes some, I'm sure, but I didn't mind. I added 1 tsp. of molassas, and I think that was a great addition. I cooked this in a loaf pan because it was easier to pour the dough into that instead of getting my hands all sticky trying to form a ball. I will DEFINITELY make this again.

Samosas

You know, this was good, but not great. I did change a couple of things-- ground beef instead of lamb (don't like lamb) and I used pie crusts instead of making my own wrappers. I baked these like empanadas instead of frying them, but I don't think the outer shell was the problem. The filling just seemed like it lacked something. We ate it, but I don't know if I will make it again. Maybe it needs tomatoes.

Easy Cajun Grilled Veggies

The group of people I made this for all really enjoyed this-- instead of two yellow squashes, I only did one and did 1 and a half green peppers cut into large chunks instead. I omitted the additional salt-- the w. sauce has enough! I used one large vidalia onion and put everything on skewers. I would definitely make this again, but with a touch less olive oil.
