Bryan's Spicy Red Lentil Soup

This was okay, but for whatever reason, the cardamom ruined it for me, and I only did 1 tsp. I added 1/2 tsp. of turmeric, 1/2 tsp. of coriander (as someone suggested) and an extra 1/2 tsp. of curry, used chicken broth instead of water (3 cups, not 2) and didn't blend it. The lentils seemed to need about 45 minutes to get soft. I would make this again without the cardamom, and either with more broth to make it soupier, or served over basmati rice using the 3 cups of broth only. It was pretty easy to throw together though.

Minced Beef with Black-Eyed Beans

This was pretty good. I didn't put any meat in it, subbed dried cilantro and used anaheim pepper. However, I sauteed the pepper, onion and garlic together, then added the tomato, beans and spices (including the garam masala). Then I stirred in 3/4 cup of white basmati rice, 1 1/2 cups water, brought to a boil, then simmered everything covered for 20 minutes, adding the lemon juice at the end. It was really easy, and pretty good. I'm sure it's good with the beef too.

Jimmy's Mexican Pizza

I'm sure this will be even better when I have higher quality ingredients (I don't reccomend the walmart-brand refried beans-- they're beyond bland) and also have the tomatoes on hand, but as I made it, we really enjoyed it. About the only thing I changed was using an anaheim pepper instead of jalepeno, along with adding more garlic. This was surprisingly easy to throw together, especially if you mix the refried beans in with the meat/onion mixture-- makes it easier to spread that way.

Jamaican Tortilla Soup

This was good, but I had to double the spices. I didn't have any thyme or lime, and I really think the lime is essential because as I made it, it was just okay, but for the leftovers, I will definitely be making sure I go buy a lime. I was expecting a stronger coconut flavor, and would maybe consider losing some of the chicken broth and doing a full can of coconut milk next time. Also, the cheese didn't really seem essential. It's probably fine without it. Just don't forget the lime!

Spanish Potato Omelet

This was pretty tasty, although I made mine more like a scramble than an omelet. I fried up the potatoes and onions first, and then poured in the eggs and scrambled everything together. I also cooked the tomatoes instead of adding them at the end, but skipped the green onion. By scrambling it all together, I think I shaved a considerable amount of time on the cooking process. I added about a 1/2 cup of sharp cheddar, and that was really tasty. Next time, I think I'll add green pepper.

Sean's Falafel and Cucumber Sauce

This was delicious, although I didn't have the ingredients to make the sauce (next time though!) and only topped with a bit of sour cream. I used half a pound of dried garbanzo beans, soaked overnight and then cooked for 3 hours in place of the canned ones.

Greek Green Beans

This was pretty good. I've had a potato dish that was very similar, but this was a different way to cook green beans. As suggested, I added oregano. I halved the recipe, but did 3 cloves of garlic and used one 15 oz can of petite diced tomatoes. Because of that, I didn't add any sugar and went light on the additional salt since canned tomatoes have plenty of both. Cooked for around 30 minutes (my beans were frozen), and that seemed fine.

Jay's Signature Pizza Crust

I didn't quite expect it to come out so thick, but that was all right. This was the first time I made pizza crust where I didn't make a huge mess-- I don't know if it was the recipe or I'm just getting better, but that made the crust SEEM better, ha. Topped it with BBQ sauce, buffalo chicken strips and monteray jack cheese and it was perfect. I'll use this recipe again, as I like that I don't have to have bread flour on hand.

Oklahoma Cheese Grits

This was waaaay better than I expected it to be. I was just looking for something easy with a minimum of ingredients, but it turned out great. I halved the recipe, so I used a 7x11 dish and it only needed about 50 minutes to bake. I only had polenta (corn grits), so I cooked that according to directions, which took about 30 minutes. I used a mix of sharp cheddar and monteray jack. I did only seasoning salt-- no additional salt. We ate half of it one night, and then the next night, I warmed the rest up with a drained can of black beans mixed in. I will definitely make this again. It's a little time intensive, but it's easy.

Citrus Veggie Stir-Fry

This was pretty boring for me. I didn't have any cashews, but I don't think that would have helped much. I've made many better citrus-based stir-fry recipes, so I don't think I'll be coming back to this one, but my 2 1/2 year old liked it, so that's something.

Oven Barbecued Beef Brisket I

I pretty much already knew how to make this without the recipe, so I used this to know what temperature and time to cook it. Brisket is one of my most favorite main dishes ever, and I like it with a strong BBQ flavor so I just eyeballed the amount until everything was good and covered, and didn't bother with the water. Turned out great. Thanks!

Beaker's Vegetable Barley Soup

Honestly, this was a little disappointing. I'd give it a 3.5, but I will round up and click on the 4 stars for a rating. I substituted green pepper for the zucchini and black beans instead of garbanzo. This was only ok tasting until I added a sprinkle of parmesan cheese and some balsamic vinegar to my bowl. It was better than other vegetable soup recipes I have made on here, but it was not the best.

Morgan's Breakfast Polenta

I don't know if it's fair for me to give this any star rating at all because my dislike of this may not actually be the recipe's fault. But they require you to give it some stars now, so I guess I will rate it in the middle. I just thought it was way too sweet. Some people might like that though, and otherwise, the texture was good. You may want to lay off the additional sugar if you're concerned about it being too sweet and just get your sweetness from the jam alone.

I thought this was just so-so. A little too heavy on the seasame seeds and not too spicy either. Seemed like it was missing just a little something, not sure what. I liked it all right, but I probably could have thrown together something better.

I'm only knocking off a star because I think you need to double the spices to really coat the chicken. Otherwise, this was great. Everyone around here thought it was one of the best chicken recipes we've had.

Meat Pie (Tourtiere)

I substituted ground beef for the pork and I cooked and drained the fat from the meat, but otherwise it was pretty much the same. I think baking the potatoes really made a difference. I didn't have too high of hopes for this recipe; I thought it would just be something different to try, and I was really surprised at how good it was! I will definitely make this again.

Old-Fashioned Potato Soup

This was really, really good. I think I upped the carrots a bit and upped the chicken bullion a little, but this was just the potato soup recipe I was looking for-- one without heavy cream or bacon! I used lactose-free milk.

Roasted Chickpeas

I just couldn't get the time or temperature adjusted right. I guess I was looking for something that was similar in texture to wasabi peas you can buy in the store, and this doesn't give you that. Maybe it will be ok with some tinkering, but I don't know how much food I want to waste trying.
