Sour Cream Coffee Cake III

This is delicious and very filling! I ended up swirling the brown sugar mix into the batter and it gave it a neat look. And I did in fact eat it with coffee!

Slow Cooker Taco Soup

I was really disappointed with this. My husband liked it all right, but I felt like something was missing because it tasted really mediocre. Maybe I was expecting more closer to chili than soup. Perhaps, if I made it again, I would use more tomato sauce and less water.

French Beef Stew

Healthy Turkey Loaf

I really enjoyed this, and yes, it's best NOT to compare it to a beef loaf. I think the amount of flavor depends on the type of salsa you use. I used medium Pace salsa and it was very effective (I've also used the walmart-brand medium salsa, and that was also good.) I did have to cook it for longer, but my oven can't make up its mind as far as accuracy goes. I have served it with garlic mashed potatoes and green beans.

Tasty Tuna Burgers

I like these, but always have trouble cooking them. Somehow I can never seem to get the middles cooked very easily, so they have a strange texture. I've tried grill pans and also baking them (375 degrees, flipping after 10 minutes, it worked pretty well.) I leave out the dill, and use more breadcrumbs. I think I'd be giving this 5 stars if I could ever figure out what I'm doing wrong in the actual cooking department!

Awesome and Easy Creamy Corn Casserole

I liked this, but I've only made it once-- guess it was slightly forgettable. I added lean ground beef to the mix to make it more interesting, and ate it as a main dish.

Pumpkin Chili Mexicana

I thought this was pretty good, but it wasn't an "Oh I must make this again immediately!" recipe. The pumpkin was somewhat odd, but still good. I found it was all better the second day.

Grilled Orange Vinaigrette Chicken Salad

This was very good, and I even forgot to put in the mandarin oranges! (I kept eating it, thinking "Did I miss something? Well it still tastes good, but still...") My only complaint is that I didn't cook up enough chicken! Instead of a garlic and herb seasoning blend, I just used garlic powder and what I had in the cabinet that I thought would go well, and it still turned out fine!

Ground Beef Enchiladas

I wasn't a huge fan of this. Next time I will use fat free sour cream instead of yogurt (the yogurt was OK, I just think I'd like the sour cream better), and I will use green chiles instead of the jalepeno. I also had a hard time rolling the smaller tortillas, and might use the 10 inch ones instead. I used Monterey Jack and Cheddar instead of mozzerella since that is what I had, but I think mozzerella will be a much better choice!

Chicken Enchiladas II

These are really tasty. I, too, use cream of chicken soup instead of mushroom (don't like mushrooms). I've even messed up the recipe and had to make it into sort of a lasagna type dish, and it still baked up well.

Sloppy Joes II

I am always really pleased when I make this. I usually do a full cup of ketchup though, just to make it a tiny bit "sloppier" as one other reviewer put it. I add a little bit more mustard than reccomended. I've used both Spicy Brown mustard and "Sweet and Tangy" mustard, which are both excellent.

Burrito Pie

I use lean ground beef, leave out the olives (don't like them), and use my lactose-free cheddar, and it's a good meal. Does last forever in a small household, so it re-heats well for leftovers!

Turkey Empanadas Grande

I was glad that I looked at the other cooks' tips, and I also used salsa instead of tomatoes. Made the meat mixture very tasty and little extra spicy since I used medium salsa. For some reason I ended up with too much meat mixture and wasn't able to use it all in the pie crusts. However, I saved it and used it in regular tortillas for lunch the bext day. Very tasty-- I had been looking for an empanadas recipe that didn't have pork!

Baked Ziti I

I loved this dish! Changed it only slightly-- no provolone cheese, just did all mozzerella, but didn't make it really cheese-heavy. I used fat-free sour cream (only 16 oz. cos it seemed to be enough) At first I thought "I don't know if this is all going to fit in the dish!" but it did! We ate it for dinner and then leftovers for lunch the next day-- reheats in microwave fine! I also added some additional Italian seasoning and a dash or two of garlic powder.

Extra Easy Hummus

I had been looking for a hummus recipe that was easy, and this definitely fits the bill. I also added some cayenne pepper, and then a little extra water which made it more like a soup. Very good.
