Garlic-Lemon Double Stuffed Chicken

Made this last week - what a great recipe! I didn't have any cream cheese on hand, so I mixed cheddar, mozzarella, and sour cream for the filling. Turned out awesome. Husband was impressed, and we're having it again tonight!

Extra Easy Hummus

Yum! I use this recipe all the time for an extremely quick, easy, and delicious hummus. It is easy to alter it to suit your taste. Sometimes I will add oil packed sundried tomatoes (~1/2 of a jar, rinsed, per batch) which makes it extra yummy (if you like sundried tomatoes, that is!) but it is also great as is. I use it to dip carrots, tortilla chips, pita bread, and even regular bread. Yum!

Apple Cheddar Bread

Very good. Hubby took it to his office and recieved rave reviews. I didn't have self-rising flour so I added baking powder as suggested by other reviewers and it turned out great :) I also used pecans in place of the walnuts because that is what I had on hand.

Homemade Lasagna

Wow - I've always been one to just use plain spaghetti sauce and cottage cheese for lasagna, but not anymore! This was fantastic! I used 1/2 lb. extra lean ground turkey and 1/2 lb. reduced fat sausage in place of the other meats (what I had on hand) and increased the sauce as suggested (2 28oz cans italian style diced tomatoes - I prefer them to the crushed). I also used f.f. cottage cheese and 1/2 c. egg substitute (~2 eggs). I made homemade noodles, as well. Served this to hubby's bosses with garlic bread for the bread maker and a salad - everyone had seconds! This sauce is amazing and will be what I use from now on!

Meatball Sandwich

Yum! I made this last night and it was excellent - a huge hit! I made a few changes based on ingredients on hand - I used 1/2 lb. extra lean ground turkey and 1/2 lb. reduced fat ground italian sausage (jimmy dean) instead of the beef. I also had to substitute 1/2 of the bread crumbs with quick oats (thought I had enough crumbs but ran out in the middle :)). I made 36 meatballs, baked for 20 minutes, then put them in the sauce. We ate them on toasted hamburger buns with a little mozzarella cheese - next time we will definitely try the baguette! These would also be excellent over spaghetti, I imagine!

Rosemary and Peppercorn Chicken

Yum! I made a few modifications to make it a little healthier and it is delicious! I cooked the chicken in a skillet that I sprayed with a little butter flavored cooking spray, no butter. When I removed the chicken, I melted 1 tablespoon reduced fat butter in the skillet and added a little bit of flour to make a roux (sp???). To this I added 1 cup skim milk, the garlic, and fresh rosemary. After it had cooked down I added some chicken broth (I let the liquid get too low) and cooked it down a little more. Served the chicken and sauce over white rice with steamed broccoli - yum!

Chocolate Spoons

Yummy :) I make these using spoon molds (I'm not sure where you get them; my mother-in-law gave them to me) and a special kind of chocolate that is used for the molds (higher amount of parafin so that the chocolate hardens and keeps its shape). One note - when making this recipe, make sure you use a high quality (i.e. name brand) of chocolate chips; the store brand doesn't seem to harden back up enough and you end up with a bit of a gooey mess :)

Original Chex® Party Mix

Yum! The classic chex mix - can't get any better! This recipe can be modified in so many ways and it still tastes delicious :) I used club snack sticks broken up instead of bagel chips and used goldfish brand pretzels - just the right size! Also, couldn't find wheat chex at my local grocery store so I just adjusted the others to make up for the loss. Again, yum! :)

Award Winning Soft Chocolate Chip Cookies

Yum! These cookies turn out soft and delicious. I sometimes use vanilla pudding - I think that due to the pudding they do not look done when they are, so be careful not to overcook. My favorite is to use chocolate pudding and to put in 1/2 chocolate chips and 1/2 peanut butter chips. I cut the recipe down to 18 cookies (reduced it by 4x) and then use 1 pkg. sugar free pudding mix (rather than the 1/2 package it calls for).

Yum! I used all-purpose flour and it still turned out great. Dough is EXTREMELY sticky and therefore a bit difficult to work with, but worth the effort! I attempted to transfer from a cookie sheet to the baking stone without parchment paper (didn't have any) and ended up deflating one of the loaves in the process as it folded over on itself. It came out a bit dense but still had a crisp crust and a chewy inside. The other loaf turned out wonderful.

Jamaican Jerk Pork Chops with Island Salsa

YUM! I have made this recipe twice now, and my guests both times raved about it. I premixed the peppers, pineapple, and beans and let sit in the fridge for a couple of hours so that the flavors would meld. I have tried this with both chicken and pork chops and both ways were great. Serve over white rice. Make sure you have plenty of milk handy because the jerk seasoning provides quite a kick!

Beef and Noodle Casserole

Yummy! I loved it, hubby thought that the cheese was not melty enough. That was probably because I used reduced fat cheddar - I still thought it was great. With regular cheese would have been even creamier. Awesome :)

Fantastic Black Bean Chili

Great healthy chili recipe! I thought it could have used a bit more kick (maybe a jalapeno or some more chili powder) but husband said it was the best chili he's ever had, so 5 stars :) I used 2 cans black beans and one can kidney beans, and used diced instead of crushed tomatoes (what I had on hand). Turned out great, and makes a ton!

Health Nut Oatmeal Cookies

Yummy :) I also replaced 1/2 of the butter with applesauce, and they turned out fine. I reduced the sugar to 1/2 cup, added a bit of cinnamon and omitted the salt (i was using dry roasted sunflower seeds which were already plenty salty). I also omitted the hazelnuts (husband doesn't like) and flax seeds (almost $8.00 at my local store for the amount needed!). Tasty cookie. If you don't particularly like the taste of nutmeg, I would suggest reducing it by at least 1/2, as these are very nutmeggy cookies. I like the flavor, though, so thought they were delicious.

Pizza Crust Fantastico

YUM! This crust is amazing. I couldn't find corn flour, so I used threw some corn meal in the blender to make it more fine, and used that. The dough (as other reviewers have said) was extremely sticky, almost more like a batter than a dough at first. I added 1/2 cup more each of all purpose and wheat flours, and then added more flour as necessary while kneading to make it smooth. My husband just has sauce and cheese on his half, while I topped mine with sauce, thin sliced roma tomatoes, broccoli, and mozzarella cheese. It was fantastico! :)

Taco Casserole

I loved this, hubby was indifferent, so 5 stars from me...by the end of the meal he said it was growing on him. I added 1 cup frozen corn and 1 can black beans and it was great. I also used lean ground turkey (98% lean) instead of ground beef to make it healthier, and used 2% milk cheese. We didn't have any sour cream so I added some fat free cottage cheese to mine to cool down the spice a little. Makes a ton! Enough for at least 4 meals for 2 people. Very goulash-like in consistency.

Stuffed Shells IV

Great recipe! It could maybe use a bit more flavor, maybe some more garlic or some italian seasonings would help to spice it up a bit :). Instead of turkey I used 1/2 lean ground beef (93% lean) and 1/2 lowfat sausage. I also used fat free cottage cheese to reduce the fat content even more (though for stuffed shells, this was amazingly healthy). My husband loved that there was meat in the shells, and it made tons of filling, so each shell was very full. You can maybe reduce the amount of cheese on top because it comes out very cheesy, but we liked it this way. I made the filling ahead of time and refrigerated it, and it was so easy to put together! Two thumbs way up on this recipe - goes in my permanent box!
