Beef Stew VI

This stew was great! I did make a few substitutions - I didn't have any beef boullion so I used 2 cans beef broth. I also forgot to add onion, and substituted flour for the cornstarch. Also, I ended up needing to leave about half way through cooking, so it cooked (on low) for ~1 hour longer than the recipe called for, and it still turned out wonderful. I halved the recipe, but there are only 2 of us, so we had a little over half leftover, and my husband ate ALL the leftovers for lunch the next day! I will definitely be making this again.

Wild Rice And Chicken Soup

Great soup, but more like a stew (which I prefer). Husband makes this for me on cold days - we usually double or triple the amount of rice and then use skim milk and a bit of all purpose flour instead of cream. It turns out great - thick, rich, delicious.

Lemon Cream Pasta with Chicken

Yum! Applebees used to have a pasta like this that I loved. Thanks for the recipe! Husband and I also added steamed veggies (carrotts, broccoli, and cauliflower) and mixed them with pasta and chicken. Great!

Fat-Free Vegetable Soup

This soup is good for being so low calorie, but it really lacks flavor of any sort. We tried adding more salt and then more boullion powder, but it was just very bland. I will make it again because of the health factor, but it really needs something elso to give it flavor.

Heather's Healthy Oatmeal Surprises

These cookies are great. They will stay soft for quite a while (although they rarely last longer than a couple of days at my house!) The last time I made them I ran out of sugar and only ended up using about 1/2 of what was called for - they still turned out great! New additions 7/12/05: I have made these cookies at least 20 times now - I ALWAYS get asked for the recipe. I have adapted the recipe to make it even healthier...I substitute applesauce for 1/2 cup butter (only use 1/4 c. butter) and for the butter I do use, it's blue bonnet light - if you do this I suggest creaming the sugars with the butter and then adding the applesauce, rather than trying to cream them all at once; I also forgot to put in all the eggs one time and they still turned out great, so now I use just the two egg whites and omit the 1 egg. I have also tried this with egg substitute and it's great. I use between 1/2 and 2/3 the amount of sugar called for and it is still plenty sweet. I have also made these into ice cream sandwiches - freeze cookies for ~15-20 minutes after cooked, then put a scoop of ice cream between the bottoms of 2 cookies. Roll in peanut butter chips and chocolate chips, wrap in saran wrap, and refreeze - yum!

Hearty Oatmeal Loaf

Lots of texture, very soft, a bit sweet - yum! Good for dipping into some chicken noodle soup or eating plain. I put it in my bread machine and set it for a medium loaf; the bread came out really light and rose up almost over the pan. This is truly one of the best breads I have made with my machine.

Lloyd's Healthy Chicken Zoopa

This soup was awesome! I omitted the onion and bell peppers (personal preference) and increased the carrot to ~2 cups. I also cooked the chicken in a skillet with a little lemon pepper. Superb. Husband had 2 and a half bowls!

Not bad, but the flavors didn't seem to mix well. Maybe if I marinated the chicken first, it would have turned out better. Interesting, but not something I will make regularly.

Twenty Minute Buns

These buns were awesome! I sustituted 1/2 wheat flour for a different texture and flavor and it worked out great. I'm sure they would be just as good with all white flour. Heavy, but not too dense. We used them for sloppy joes, and will definitely make them again. Kept well overnight and made for a good peanut butter sandwich for breakfast :)

Jay's Signature Pizza Crust

With all the great reviews, I was expecting a much better crust. It wasn't bad, but not that great, either. Crust did turn out crispy as promised, but didn't have much flavor. I would recommend Pizza Dough II (http://bread.allrecipes.com/AZ/PizzaDoughII.asp) instead. Husband liked it, though - that's why it gets 4 stars.

Garlic-Lemon Double Stuffed Chicken

Made this last week - what a great recipe! I didn't have any cream cheese on hand, so I mixed cheddar, mozzarella, and sour cream for the filling. Turned out awesome. Husband was impressed, and we're having it again tonight!

Pizza Dough II

Great pizza dough recipe! I use 5 c. all purpose and 1 c. wheat flour and it turns out great every time. My husband loves it, too - we have it every Friday night. Freezes well, too.
