Peanut Butter Bread I

Yummy but not as sweet or peanut-buttery as I expected. I made this in my mixer instead of in the bread machine. I agree with the previous review that this dough is excellent to work with - so smooth and not at all sticky! Made a 9x5 loaf as well as a nice sized round loaf. Good toasted with some jelly on it :)

Homemade Black Bean Veggie Burgers

Yummy! I altered the ingredients just a bit to suit my taste (used corn in place of the pepper and onion) and forgot the hot sauce (good thing, too! I'm not a bit spicy food fan - these have the perfect kick with the chili powder). My only complaint is that this was pretty dry. I'm not sure how to change that...maybe fewer breadcrumbs? Leave a bit of the black bean juice in the mixture? I'll definitely experiment and be making these again! Oh, and I had the burger on whole wheat toasted bread (ran out of buns) with tomato, a little 2% milk cheddar, and sour cream - delish!

Peanut Butter Carrot Cookies

Wow these were good. As other reviewers suggested, I reduced the amount of sugar and used whole wheat flour. I also used reduced fat butter, replaced the egg with 1T cornstarch and 1T water, and used reduced fat crunchy peanut butter. Excellent and healthy cookies! Next time I will probably reduce the sugar a bit more and leave out the chocolate chips (or maybe do a half batch with the chocolate - hubby is a chocolate fiend!). For my tastebuds, the chocolate overpowered the other flavors a bit. I might also add a bit of wheat germ to give them even more crunch! Hubby was skeptical at first but said that if he hadn't seen me put the carrots in, he wouldn't have known they were there (from the taste :)). Thank you for this recipe!

Delicious Rosemary Bread

Yum yum yum! I couldn't stop eating this bread :) I didn't have any bread flour so I used all purpose and added ~1.5 tablespoons wheat gluten. Other than that I followed the recipe exactly, using fresh rosemary from my garden (the first opportunity I've had to use it!) The texture was awesome and stayed soft for days (though after the first day there wasn't much left :)). Thank you for this recipe!

Cabbage on the Grill

I don't usually give bad reviews but this recipe just didn't work. I followed the directions exactly, cooked for 40 minutes, and my cabbage turned out crunchy and somewhat bitter (and the cabbage was fine raw). Usually I love cabbage, and it's my husband's favorite side dish, but not like this!

Unbelievable Chicken

Yum! I have to admit I probably didn't use the right proportions of everything (couldn't get the mustard out of the jar so I just guessed that it was about the right amount and mixed everything in there :)). I also used lemon and lime juice from bottles and didn't know how much to use, so I guessed. I was a little skeptical but SOOO glad I tried this - hubby and I have been in a grilled chicken rut, always using bbq sauce, and this was a wonderful change. Will make again and again.

Pita Chips

Yum! I used homemade whole wheat pitas (from this site), sprayed them with canola oil cooking spray, and sprinkled on the spices (rather than measuring). Then I sprayed them again to help the spices stick. Dip in homemade hummus - yum!

Chicken and Spinach Ravioli

I can't comment on the pasta part because I used my own recipe, but the filling just isn't that great - I usually really enjoy ground chicken dishes and spinach dishes but this was just so-so; too much work for the result.

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

I only made the dressing from this, but yummy! Didn't have too much of a citrussy flavor so next time I'll use a stronger/sweeter oj. Other than that this makes a great vinaigrette!

Bill's Braisin Bread

Yummy, dense bread - awesome toasted with butter and cinnamon sugar! I don't like the way my bread machine does bread, so I mixed this in my mixer with the dough hook, then let it rise in a loaf pan for 1 hour. Baked at 350 for ~25-30 minutes (could have gone longer, but I like doughy-er bread). Oh, and I added a liberal amount of cinnamon to the dough, as well :) Very dense and tasty.

Chicken Pot Pie Soup

Yummy, easy, comforting. I added a little more chicken than called for just because that's what I had. Used frozen peas and corn, and cooked fresh carrot slices. Served this with bisquick biscuits and a salad - awesome!

J.P.'s Big Daddy Biscuits

These did not turn out well, but I won't rate them poorly because I think it was mostly my fault. I didn't have shortening and I ran out of butter so I subbed applesauce for half (which usually works); the taste was fine but the biscuits were hard and chewy, and did not rise well. I will probably try them again as written because they did taste really good :)

Whole Grain Waffles

Yummy :) I didn't have any flax seed so I used ground oatmeal instead. The batter was extremely thin so I added a bit of extra flour. They came out delicious! I love the crunchiness of wheat germ and the wholesome taste that these have. Served with light butter and low sugar syrup - what a delicous (and healthy!) breakfast :)

Health Nut Blueberry Muffins

Yum! The only changes I made were using strawberries (frozen, chopped) instead of the blueberries (what I had on hand) and applesauce instead of the banana. Oh, and I made buttermilk by using 1/4t. lemon juice with the milk (I didn't have any bananas or buttermilk). I used 1/3 c. applesauce for a half recipe and would probably reduce is just a bit next time. These muffins are extremely moist - not chewy like the typical "healthy" muffins :) Awesome and pretty easy to make, and what a wonderful way to use all the healthy stuff I keep on hand! I would give this recipe 10 stars if I could!

Flaky Biscuits

I felt so-so on this recipe - 3 stars because I feel like part of it was my fault. We didn't have any malt vinegar, so I used apple cider vinegar, which was probably a mistake as the biscuits were rather vinegarry. This would have been ok, but we could also taste the baking soda - not a good flavor :P The didn't seem that much different than the recipe on the box, so I think that I'll stick to that one. Sorry!

Ground Turkey Soup

Yummy! I used 4 cans reduced sodium beef broth instead of the boullion (personal preference) and also added 1 can drained green beans, and ~1&1/2 cups each frozen corn and peas. Makes a ton, freezes well, and tastes delicious. Good old fashioned (healthy with the turkey!) vegetable soup.

Creamy Potato Pork Chop Bake

Yummy! I modified this to suit our taste buds and nutrition goals and it came out great! Used fat free sour cream, skim milk, and healthy choice cream of chicken soup. Also used boneless skinless chicken breasts (what I had on hand). I didn't have enough french fried onions to put in the casserole, so I just sprinkled them on top. Oh, and I used mozzerella instead of cheddar (again, what I had on hand :)). Next time I will use more french fried onions than I did and will try to use cheddar cheese instead. Very tasty and creamy, though (to those who complained about too much milk, it's supposed to be creamy, not crispy :)) Hubby and I gobbled this up - delicious comfort food (without all the guilt!)

Actually Delicious Turkey Burgers

Yum! Okay, so I made quite a few changes (as per other reviewers, and some of my own...). I cut the recipe to 5 servings, first of all, because I only had 1.3lbs turkey (how it's packaged here). Added a splash of soy and a splash of worcestershire to the mix, as well as a bit of tomato based chili sauce (like catsup, a couple of tablespoons). This made the mixture a little too wet so I also added a bit of quick oats (about 1/4-1/3 cup). With the extra stuff, this made 7 decent sized burgers. Cooked these on the grill - delicious! I will DEFINITELY make these again - once it's warm enough, they will likely become a weekly staple :) Would have been equally good without my additions, probably. Served on whole wheat buns with a little barbeque sauce. Thank you for this awesome recipe!
