Chuck's Favorite Mac and Cheese

Best mac and cheese ever, and much easier than many homemade mac n cheese recipes. I didnt care for the breadcrumbs. I will use ritz next time. I used fat free sour cream and low fat cottage cheese, and it didnt seem to make a difference.

Chicken Tetrazzini IV

I made this exactly per the recipe, and everything seemed to come out as intended. I'm only giving it three stars because as written, this is very bland. It needs serious flavor. Seems like a good base,so I'll probably try again with mods to add favor.

No Bake Peanut Butter Pie

This is delicious and so easy. I like it in a chocolate cookie crust. I've made it into store-bought Oreo crusts, and once I put the whole recipe into a 9x13 Pyrex with a cookie crust I made. Both were great. I also sprinkle salted peanuts (love the sweet/salty combo) and drizzle with chocolate and caramel syrup. It looks great. You can make this days ahead and keep it in the freezer.

Oatmeal Butterscotch Cookies

These taste really good, but they lack a little body. Edit: I made these a second time with 1 c Butter Crisco instead of butter and an additional 1/2 c Flour. They had the same great taste but much better consistency. I'll make them that way from now on.

Spaghetti Pie III

Made this tonight. Husband declared it a new favorite. Like many, I made a few tweaks. I mixed the pasta with the cream mixture and really like the result of that. I was making a reduced recipe but still used a whole jar of sauce, and I wish I'd had another half a jar. In the cream mixture, I did not use green onions because I didn't have them on hand, but I did add Parmesan and Romano cheese to it. I also used mozzarella on top instead of cheddar. I don't plan to change anything next time except to have more sauce.

Dill Sauce

Whipped this up with dried dill since it was all I had. I made it to go with some basic baked Tilapia, but it's so good, my mind is spinning with all the stuff I could put it on and in.

Rich and Creamy Tomato Basil Soup

This may be the most delicious thing I've ever made, and so easy. I made it exactly as the recipe called for except I used about 32 grape tomatoes since they're the only kind that have flavor this time of year.

Cowboy Caviar

This is delicious. I didn't follow the recipe precisely. I chucked the onion, a whole red bell pepper, a handful of green onions and a handful of cilantro in the food processor and chopped it all together, then just mixed that with the beans, corn and dressing. I was skeptical about the Italian dressing, but trusted others' reviews that the Kraft Zesty Italian was the way to go, and it was fantastic.

Slow Cooker Chicken Stroganoff

I have made this so many times, and it is excellent! It reheats very well too. Learning that so little butter is all the moisture you need to cook meat in a slow cooker has been a revelation to me. Chicken with just a couple pats of butter, salt and pepper in the slow cooker is now THE way I make shredded chicken for any recipe I need. When I want different flavors, I try different dry mixes including dry pesto sauce mix and my favorite, Hidden Valley Ranch dry dressing mix. I love that you can put pre-cleaned frozen meat in and it works just as well.

SMUCKER'S® Stuffed French Toast

I made it exactly according to the recipe, and it was just okay. I specifically disliked the filling, and I love cream cheese fillings. I won't make this again, but I might serve regular French toast with a dollop of another cream cheese filling and the same sauce. I think that would be great.

Chicken Tikka Masala

I made this last night and was very happy with the chicken but somewhat disappointed in the sauce. I do plan to make it again, though. I cooked the chicken on metal skewers laid across a 9x13 Pyrex in the oven for 25 minutes at 350. It was so good that I may make just the chicken and serve it with couscous in the future. I also left off all but 1 tsp of salt in both the chicken marinade and the sauce. When I make the sauce again, I will leave out the jalepeno completely at my husband's request. (I thought the spice was fine, but he doesn't like hot stuff.) Second, I'm going to use petite diced tomatoes rather than tomato sauce. There was something distinct that I disliked, and I'm pretty sure it came from the canned tomato sauce. It may have been the brand I used, but my favorite Indian restaurant's Tikka Masala has chunks of tomatoes in the sauce, so I think we'll like that better. I'm also going to cook the sauce for a really long time because I'm not sure all the flavors had enough time to combine on my first go round.

Too Much Chocolate Cake

Turned out as advertised--moist and so chocolaty. I followed the recipe except I used a whole pack of mini chocolate chips. I had trouble getting it done. I baked it another 10 minutes at 350, and when it still wasn't done I turned the temp down to 335 and baked another 15 minutes. Next time I'm going to try less oil and see if that takes care of it. This recipe is so delicious and easy that it's worth experimenting with to figure out the cook time.

Chocolate Ganache

So easy and wonderful. I found high quality chocolate in chocolate chip form and used that instead of worrying about chopping the chocolate. I don't think I'll ever buy a jar of chocolate sauce or hot fudge again.

Best Guacamole

Way too much olive oil. The taste of the oil overpowers the avacado. Next time I will taste it before adding ANY olive oil because I really don't think it's necessary.

Condensed Milk Chocolate Frosting

Easy and delicious. I used a full 8-oz semi-sweet chocolate bar because once I saw the listed amount melted in the pan, I could see it was not going to be chocolatey enough for me. I wanted fudgey. It tasted great. I loved the texture. The appearance was highly glossy, which I also liked. I'm giving four instead of five stars because I do prefer the taste and texture of chocolate icing made with cocoa, butter, milk and sugar better, but I usually end up burning that one, so it's only for when I'm feeling brave. This will be my standard chocolate icing from now on.

Orzo with Mushrooms and Walnuts

Champagne Chicken
