West Coast Trail Cookies

This makes an excellent and hearty cookie, seems flexible for add-in ingred. I used a few of wcm's ideas listed in the notes so as to use what I had: wheat germ and sunflower seeds instead of flaxseed and pumpkin seeds. I used dark choc chips, perfect for this cookie - and usually I like milk choc in cookies. The coconut made them wonderfully chewy. My only significant changes were no cinnamon nor Craisins. I will try 1/2 t salt next time, the third time with cinnamon. It's great that everyone can now see this recipe.

This was amazingly good. My minimal changes: butter; blended butter, sugar, and eggs b/4 adding the rest; put 1 T lemon jce in cup and added enough milk (evap) to make 1/2 c; greased pan and used parchment paper. Next time will try more lemon jce in batter and a bit less sugar in topping. The topping was a little sugary, but that may have been because of humid weather or not enough jce. An unexpected treat: removing the loaf from the pan, I smelled a buttery, lemony goodness. Long ago I lost most of my sense of smell. To feel like I walked by a little bakery right after a batch of lemon bread was taken out of the oven, I have to thank you, manella. Getting this connection - and knowing instantly what it was - after 31 yrs of near nothing makes me want to make this bread often.

Easy Chicken Fajita Marinade

This was fantastic. As jmcdaneld said, it's easy to switch up ingred. My changes: fresh garlic, no honey or pepper, added cumin. ?ingred amts. I had only an hr for marinating, got plenty of flavor. It's now a go-to recipe.

Sweet Vanilla Cupcakes

Have you ever tried a recipe that instantly becomes a favorite? This is one for me! My only change was making 15 cupcakes w/ the second batch. The flavor was excellent the first time, but the cupcake liners were too full.

Light Avocado Egg Salad

This is fantastic! I used Dijon mustard and extra avocado but look at this recipe as one where the egg-avocado ratio can easily be varied. I don't like using mayo and and a lot of egg yolks; what a great find is this idea. K-Dub, I hope you share more of your recipes!
