Excellent and Healthy Cornbread

Even though I loved the final result, I changed A LOT about this recipe. I added a can of creamed corn, cut out the sugar, and cut the yogurt by half (and used full-fat). Baked it for 20 mins and it turned out perfectly! Next time I may put a tiny bit more salt in it though. UPDATE: I have officially made this recipe 3 times with different substitutions, including the original version. The creamed corn version I outline above is absolutely the best. The creamed corn makes it so moist and perfect! The full-fat yogurt probably helped too. This is obvious, but the more damp the dough is when you put it in the oven, the less dry it will turn out. The wetter the better!

Pumpkin Cookies I

Changed it up a bit! Used butter instead of shortening, and half white sugar and half brown sugar. Also, I substituted the vanilla with pumpkin spice baking emulsion. Turned out pretty good! ALSO. 'Teaspoonfuls'? The cookies were tiny and I made twice as many as the recipe predicted. Maybe a typo?

Baby Spinach Omelet

I don't know HOW this ingredient combination is so awesome, but this was probably the best omelet I've ever made. I substituted egg whites and cooked some chopped onions for a couple minutes beforehand instead of using the onion powder. SOOO GOOD. It must be black magic, I tell you!

Pumpkin Gingerbread

I would recommend TRIPLING the spice content. I doubled it and it still wasn't enough. I also cut the sugar by 1/3 and the oil by half and used applesauce instead. I was pleased with the results, it tasted especially good the next day. :)

Absolutely fantastic! My whole family loved it. I changed only 2 things: I used vegetarian ground round instead of beef and I didn't use any butter to brown it.

Subbed cornstarch in place of flour. Also, I would recommend adding the bell peppers 5-8 minutes before done, unless you like them super soft.

Mini Cheesecakes I

Accidentally used cream cheese spread rather than cream cheese and it worked out perfectly! Instead of a vanilla wafer crust, I used chocolate cookie crumbs, held together by a bit of butter and applesauce. I reduced the sugar to 1/2 cup and added 1/4 cup peanut butter. TIP: Make sure the cream cheese is at room temperature before using.
