Pumpkin Cream Cheese Muffins

Soft and moist but if I make them again, I'll A) use less canola oil! It's all I can taste! and B) put in more cinnamon or perhaps some pumpkin spice.

Zucchini Herb Casserole

I made it for my family and they loved it! I did as commenters suggested and tripled the spices, except for the garlic salt, and cooked the rice in chicken broth. I also used jalapeno Monterey Jack cheese which went really well with the dish. Great dish!

Strawberry Bread

Sooo sooo good. I did change things up a little bit to make the recipe healthier. First off, I only made one loaf. 1) I halved the sugar and used 5 packets of powdered stevia. 2) Instead of strawberries, I used two cups of frozen berries. 3) I used only three tablespoons of vegetable oil, I mashed a ripe banana for the rest of the oil. Before I mixed the fruit and the oil together, I microwaved the berries and the banana. After blending the fruit and oil mixture, I added an additional 1/2 cup fresh berries, just to give the loaf some texture. Didn't have any pecans, so I left them out. Result: Fantastic!!! If you need anymore sweetness, I would maybe try some vanilla extract and liquid stevia. All in all though, I was very pleased.

Pumpkin Gingerbread

I would recommend TRIPLING the spice content. I doubled it and it still wasn't enough. I also cut the sugar by 1/3 and the oil by half and used applesauce instead. I was pleased with the results, it tasted especially good the next day. :)

Pumpkin Cookies I

Changed it up a bit! Used butter instead of shortening, and half white sugar and half brown sugar. Also, I substituted the vanilla with pumpkin spice baking emulsion. Turned out pretty good! ALSO. 'Teaspoonfuls'? The cookies were tiny and I made twice as many as the recipe predicted. Maybe a typo?
