Portabella Nirvana

Reviewed: Apr. 25, 2006
Coming from Mary;and, it was against my nature not to add Old Bay Seasoning, however, this recipie is wonderful just as it is written. I was worried about the amount of dressiing suggested for the marinade so I did cut that down a bit and I topped the final product with a little remainder cheese. I was also out of buttery crackers so I made butter croutons that I crumbled into the crab cheese mixture. Beautiful presentation and perfect for the portabello mushroom lover.

Fried Cabbage II

It was a big hit at dinner. Yummy!!! The extra zing with the vinegar really set it off. Not too greasy as I thought it might be. We all really enjoyed this recipe.

Baked Sweet Potatoes with Ginger and Honey

Reviewed: Mar. 24, 2006
Well...My mom loves ginger in this recipe and I don't like it so much. It was a little over powering for my taste. So if you enjoy ginger you will enjoy this recipe.

Double Cheese Casserole

Reviewed: Sep. 28, 2005
This was a good recipe. I changed some things that other members had suggested. I used crushed tomatoes with garlic and basil. I also skipped the cottage cheese because my husband doesn't like it and substitued with mozzarella and parmesan shredded cheeses, reserving some to place on top of the cassarole. I also used onion powder, about 1 Tbsp, since I didn't have any onions on hand. I didn't add salt when I was cooking because I wasn't sure how salty the cheeses would make the cassarole, but it definately needed it.

Beer Roasted Lime Chicken

Reviewed: Sep. 18, 2005
I love the taste of this chicken. I used the lime zest of a whole lime, chopped, along with the juice for a stronger lime flavor. I made this into skewers using chicken breast strips and grilled for a party. I also used a whole can of beer since I marinated the strips in a zip lock bag in the frig for about 1 hour. BE CAREFUL that if you do this, you do not over cook them. I did this to the first batch. Good Luck!!!

Wonderful crab cake. Not too salty or spicy. They were so good we had a hard time getting them to the table before they were all eaten.

Terrific! I am on a diet so I had to modify a bit. I omitted the bacon for a 1/4 tsp ham season soup base and completed forgot about the cheese. This was so good that I had the leftovers for lunch.

Herman Reunion Cheese Ball

Reviewed: May 24, 2005
This was perfect. I have made this for my friends as gifts and for parties. I let it set out for a few minutes before serving so people can easily get their serving. I also decided against the pecans because of food alergies in some of my guests.

Chicken Enchiladas V

YUMMY!!!! I had left over pork roast that I chopped up and used mexican shredded cheese. I topped with a dollop of sour cream and served with mexican rice. This is one terrific way to make use of my left over meats. I will make this again and again.

Honey Flaked Chicken

Reviewed: Mar. 2, 2005
This was just okay. I don't think I would make it again. It really was too sweet. I think I like the original Kelloggs version with no honey, just milk. I did add extra flavor by adding garlic and onion powder. It was very crispy. I did crush the corn flakes before dipping the chicken in them.

Vinegar Based BBQ Sauce

Reviewed: Mar. 1, 2005
HOLY COW!!!! This is incredible. I was craving Parker's BBQ(famous North Carolina BBQ restaurant) and this is the closest I could have gotten. Thank you A SIDE NOTE: I have made this recipe quite a few times since my review. Two points to add, one is that another famous BBQ restaurant in NC is Gardners. This recipe is fairly close, but perhaps more vinegar and hot than Gardners version. The second point is now I use this recipe as a way to use up my left over pork roast. I chop the meat into cubes and simmer on the stove top until meat begins to break down and vinegar is just about gone. LOVE THIS RECIPE!!!

This was just OK. My family thought it was too doughy. I decided to flatten them with a fork and they were much better. I think they rose too much.
