Holiday Spiced Cranberry Relish

Reviewed: Dec. 1, 2013
I had the cranberry sauce, mandarin oranges and pineapple on hand, so I thought that I'd make this for Thanksgiving. I did cut the ground cinnamon to 3/4 of a tablespoon because one whole tablespoon looked like too much for the volume...and that was a good call. I also added one cup of chopped walnuts and a few sliced green grapes and that took this recipe right to "excellent!" Everyone loved it and had seconds. Keeping this recipe for future holidays!

Moussaka Cottage Pie

Reviewed: Apr. 9, 2013
Had an eggplant on hand and some ground beef, found this recipe (LOVE the "ingredients search" on this site!!) and threw it together. Very tasty and will definitely make it again. Made a few minor changes to make it easier: 1) A little less olive oil to fry the onions and garlic. 2) Add and brown the ground beef, but hold off on adding the spices and tomatoes. 3) DRAIN the ground beef to get the fat and extra oil out. 4) In a separate bowl, stir in the spices (also add one teaspoon of cumin, as per a reviewer's suggestion) into the crushed tomatoes and, once the ground beef is drained, add it. I did sprinkle a tiny bit of Greek Seasoning, along with sea salt and pepper, on the oiled eggplant before broiling on each side. It all came together beautifully, but the leftovers the next day were even better! Keeping this recipe, for sure.

Pasta Lasagna

Reviewed: Jun. 18, 2011
My son-in-law said this was one of my best casseroles ever, so that really says something! Based on recommendations, I increased all the ingredients except the cheeses and egg. I added a finely chopped onion and some chopped pepperoni while frying the ground beef. I also added a heaping tablespoon of dried parsley to the ricotta mixture and some ground pepper. Baked it for 25 mins. covered with foil and then uncovered for another 15 mins. I used a box of three-colored rotini, instead of the penne, and the corkscrews held the sauce & cheeses beautifully. NOTE: Make sure that your pasta is slightly undercooked before assembling--I even rinsed it in cold water to stop the cooking process. Will definitely be making this again soon!

Kielbasa and Cabbage II

Reviewed: Feb. 21, 2008
Based on previous reviews, I added some chopped garlic to the onion saute, reduced the cajun spice and the black pepper to ONE teaspoon each, and added a generous squirt of brown mustard to the worcestershire before adding. SENSATIONAL! Very tasty and this recipe is a definite keeper. Love it.

Surf and Turf - Gulf Coast Style

Reviewed: Jul. 18, 2004
The bacon gets crisp with a nice barbeque flavor, the onions soften and caramelize a little, and the fish gets steamed to perfection in the middle with bacon and onion juices! We all loved this dish and will whip it up again for company next time.
