Penne Pasta with Spinach and Bacon

Reviewed: Feb. 15, 2009
This is a good recipe for a weeknight meal since it's so easy to prepare. I used 8 oz pasta, extra bacon and added a generous amount of black pepper. I like cheese on everything, so I also sprinkled some Parm on top. Next time I'll try using rotel tomatoes for extra spice and drain some of the liquid off.

Coq Au Vin, My Way

Reviewed: Feb. 14, 2009
I followed the recipe exactly and the flavors were great, but the chicken was overcooked. It wasn't tender at all. If it had been, this would have been a 5 star recipe. The flavor was wonderful.

Lemon was good, but I'd like to try this recipe with other kinds of pie filling as well.

Mini Ham And Cheese Rolls

Reviewed: Feb. 1, 2009
I made this as an appetizer for the Super Bowl. My mom makes something similiar and I like her's better, so I'm going to have to get the recipe. These were good, but they were missing something.

Warm Crab Parmesan Dip

Reviewed: Feb. 1, 2009
I made this as an appetizer for the Super Bowl. It didn't have a whole lot of flavor. I used about 16 oz of crab meat which proved to be too much, but that was my error. I only had about 1/3 cup mayo, so that was all I used. I tasted the dip before I put it in the oven and it was bland so I added some black pepper and red pepper. It still needed something more though.

I made this as an appetizer for the Super Bowl. It was a nice compliment to the bacon wrapped smokies.

Bacon Wrapped Smokies

Reviewed: Feb. 1, 2009
I made this as an appetizer for the Super Bowl. They were easy to make. I covered each piece of bacon and each smokie in the brown sugar before I put them together. Next time I'll just sprinkle the sugar over the top because I don't think it made much of a difference and it was more time consuming.

Paprika Chicken with Sour Cream Gravy

Reviewed: Jan. 31, 2009
Despite all the spices, the chicken wasn't very flavorful. I recommend using tablespoons of the spices instead of teaspoons. Next time I think I'll also add spices to the gravy. It's a very easy recipe, so it's worth playing around with.

Broiler S'mores

Reviewed: Jan. 19, 2009
I remember making these around the campfire when I was a girl scout. They're so good. I used one big marshmallow per s'more and then put the whole thing back under the broiler to help melt the chocolate.

Buttermilk Pancakes II

Reviewed: Jan. 1, 2009
YUMMY! My search for the perfect pancake recipe is over. These are light, fluffy and delicious. I scaled the recipe down from 12 to 4 and was able to make 8 pancakes using 1/4 cup of batter per pancake.

Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Dec. 29, 2008
I really wanted to like this recipe because it's so easy to make. The sauce was wonderful, but I didn't like the Italian sausage in it. Maybe I'll try it again with chicken or turkey. The sauce was so creamy and delicious with the tomatoes and pasta.

Good Old Fashioned Pancakes

Reviewed: Dec. 29, 2008
This was my first attempt at making pancakes. They weren't bad. They were light and fluffy, but I felt they were missing something. I'm going to try a recipe for buttermilk pancakes next.

Cream Cheese Mints

These are very time consuming, but worth it. I used 4 oz cream cheese and 1/2 t peppermint extract. One batch made 100 mints.

Lemon Snowballs

Nice lemon flavor. The sweetness of the powdered sugar balances the tartness of the lemon really well.

French Toast I

Reviewed: Dec. 7, 2008
The first batch I made stuck to the bottom. I think I crowded too much bread in the pan. My second batch turned out great. I used butter instead of oil and added extra cinnamon. The majority of the spices will stick to the first piece of bread, so sprinkle some extra cinnamon right on the bread after dunking to make sure each piece is flavorful.

Aussie Chicken

Reviewed: Oct. 4, 2008
Anything with mushrooms, cheese and bacon is going to get 5 stars from me. I marinated the chicken for several hours in buttermilk to help keep it moist. Then I lightly sprinkled it with seasoning salt before browning. I like to saute my mushrooms before I add them to any dish, so I did that too. I chose to use dijon mustard in the honey mustard sauce for extra flavor. In spite of the calories, I'll make this again.

Spaghetti Carbonara II

Reviewed: Oct. 3, 2008
I've never had spaghetti carbonara before so I didn't know exactly what to expect. I was nervous about the raw eggs, but it turned out really good. I doubled the amounts of cheese and garlic. I also followed other's suggestions by mixing the egg and cheese together before adding them to the pasta. I removed the pasta from the heat before adding the egg mixture and the sauce was very creamy. There wasn't any scrambling.

Apple Crisp II

Reviewed: Oct. 3, 2008
After reading many reviews, I left out the water, doubled the topping, added 1/4 t of nutmeg and tossed the apples with the sugar mixture. I will stick to the original amount of topping next time. The apples seemed to disappear under everything else. I didn't find the dish too sweet because I used granny smith apples. It took almost 3 lbs to get 10 cups worth.

KELLOGG'S* RICE KRISPIES* Squares Original Recipe

Reviewed: Sep. 21, 2008
I'm not a big fan of rice krispie treats, but my husband is so I made these for him. I added a cup of mini chocolate chips for a little more sweetness. All the chips melted so every bite was chocolately. I also used a heart shaped cookie cutter to cut them out since I was making them for my husband.
