Plum Jam

Wow, this is delicious jam. I made several double batches with some Italian plumbs picked from a neighbor's tree. I used two boxes of pectin per recipe and only 3 cups of sugar per recipe. We like our jam tart & our plumbs must've been sweet coming right off the tree. I added a squeeze of fresh lemon to reduce foaming. I also made a batch of syrup by following the recipe exactly the same but using only 1 box of pectin per recipe. Thank you!

Brunch Egg Bake

Loved this, made it for Christmas brunch. Made just as instructed, except used fresh mushrooms. I put it together the night before, refrigerated and baked in the morning. It took MUCH longer than 35-40 min, possibly twice that amount of time. This might have been becausew it was refrigerated? I ended up cranking up the heat to 400 and it finally set up in the middle. It was worth the wait though! Excellent.

Refried Beans Without the Refry

Subbed chicken stock for water. Used a can of green chiles in place of jalapeño. Need to eliminate salt altogether if using stock! Ran beans through food processor which made them creamy & delicious. Served with Cojita cheese sprinkled on top. Big hit at my carne Asada party.

Peach Pie

Bought a box of fresh peaches from a local fruit stand & made 4 pies. Used 1/2 c white & 1/2 c brown sugar. Added 1 Tbsp cornstarch & 1/2 tsp cinnamon. Used top crust because i didn't want to mess with lattice. Baked at 425 for 15 min then turned down oven for rest of baking time. Let pies rest in oven for a couple hrs to set. Served a la mode, of course.

Baked Pork Chops I

My family loved this recipe. Followed directions exactly except doubled sauce, used golden mushroom & regular mushroom soup. Didn't bake as long as instructed, maybe 25 minutes? Would be great with mashed potatoes or rice.

Chicken Enchiladas V

Loved this recipe. Only thing I changed was doubling the sauce and adding a couple spoonfuls of it and some cheese (used cheddar/jack mix) to inside of tortilla.

Strawberry Pie II

Great! I followed some of the recommendations here, such as mashing only 1/4 of the strawberries, reducing sugar to 3/4 cup and water to 1/2 cup. I made a deep dish pie so I multiplied everything by 1 1/2. Also added some red food coloring to the glaze. Incorporated glaze into strawberries before filling pastry. I've also tried the chocoloate on the inside of the crust which was good. Just be sure to cool the glaze before filling.

Old Fashioned Coconut Cream Pie

Excellent! I used a deep dish crust so I multiplied everything by 1 1/2. Also used half coconut milk and half half-and-half. Cornstarch for the flour, and tempered the eggs before I added them to the custard. Added extra coconut to custard as well. Only toasted the coconut that went on top.

Classic Peanut Butter Cookies

I doubled the recipe so I'd have some to freeze for school lunches. As suggested, I added an extra cup of peanut butter (3 cups total) and an extra 1/2 cup of flour (3 cups total). Didn't have time to refrigerate dough. Just scooped with a small ice cream scoop and left them in balls on cookie sheet (didn't smash with fork). Turned out great!

Slow Cooker Chicken Taco Soup

I thought this was great. Doubled recipe and served a crowd tonight. I thought the recommended (Bill Echols) seasoning mix is what made this one better than other taco soups that I've tried. The flavor is better.

Chicken Wild Rice Soup I

Love this soup. Used wild rice blend I found in the bulk section of my supermarket. Boiled ahead of time as someone else suggested- 4 cups of water & tsp salt per 1 cup dry wild rice. Used butter/olive oil blend, subbed thyme instead of parsley. I also used 2% milk instead of half & half. Was plenty creamy for us. I think the curry makes this soup! Very subtle flavor- don't leave it out!
